Tried with double and with whipping cream, got my victoria sponge jammed up ready, been whisking it like nobodies business, lots of bubbles but still thin. It was taken out of the fridge cold. Anyone got a technique?

I dont understand why its not whipping either, i have never had a problem even straight from the fridge, but thanks for brightening my day.make the most of it, we are only here for the weekend.

did it whip in the end? just wondered cos last christmas at mils we had the same problem, it just wouldnt go - we all had a go and in the end were killing ourselves laughing, so in hte end with had trifle with runny, frothy cream on top lol'We're not here for a long time, we're here for a good time0

If it doesn't whip, add a spoon of milk to help it along.....0

Add a teaspoon of sugar - it will whip up quicker now:T0

When I was a little girl, I was told that cream needs to be at room temp to whip properly. Always works for me

Try a small spoon of icing sugar instead of normal heavy sugarmake the most of it, we are only here for the weekend.

Oops used granulated sugar No I tried a whisk and a fork. I have walked off and left it in a huff. I had the same problem yesterday using double cream, thought I'd get whipping cream instead, whipping cream my foot it has done !!!!!! all. I will attempt to make buttercream to fill the cake with now!!!Ahhhh.... lemony fresh victory is mineee!!!0
