Christmas Cake

Has anyone got an easy recipe for a moist light coloured fruit cake as my husband does not like dark fruit cake. I am not very good at baking - even the birds curl up and die when I try and get rid of my failures.
As there are only two of us it doesnt have to be a big cake. Wish me luck

This is a reciper given to me years ago by an old lady:
half a pound of lard or margarine
large cup sultanas cup of sugar
cup of water
Boil in saucepan then leave to cool
Add 1lb flour 2 eggs mixed spice
Mix very well in saucepan put in greased tin and cook for 2hours 150c 300f
for Christmas cake use brown sugar.
That is exactly how she gave it to me.
I usually use more eggs and add some ground almonds and glace cherries.
With some good marzipan and icing it is very nice lots of my family and friends use this recipe and it doesn't take long to get eaten.
Not everyone's choice perhaps but it is simple to make.Women and cats will do as they please and men and dogs should get used to it.;)

does anyone know when I should be making my cake?
I always leave it a bit late, is it true that I should make it early and let it mature? I was thinking of going for a hme made pudding too should that be made weeks in advance?0 -

This recipe for family fruit cake is not too dark.
8oz self raising flour
6oz butter
6oz soft brown sugar
3 eggs
1/2 tsp baking powder
1oz ground almonds
3oz sultanas
3oz raisons
3oz cherries
3oz walnuts
Grease tin. Cream together fat & sugar. Beat in eggs, one by one. Add flour & baking powder. Add dried fruit and almonds. Add a little milk if needed.
Bake for 11/2 - 2 hours Gas 2 / 325CLaughter is the sun

kabie, they should keep for 2-3 months if wrapped well and kept in airtight container, or you can freeze (pre icing) for 6 months.0

no problem. i do mine early october, freeze it, then get it out and ice it about a week before. have enough to do before xmas without baking.0

When I was a young working mother and really busy I have been known to do the whole thing on Christmas Eve, Bake, marzipan, ice, probably eat Boxing day lovely moist icing, never had any complaints ;DWomen and cats will do as they please and men and dogs should get used to it.;)

god i couldn't do that, i'm always wrapping xmas eve. (my one fault, i hate wrapping so all ways leave it till the last minute)0
