Ive used this before and its really nice. Someone who came to dinner asked me for the recipe so it had the seal of approval from guests too!
2 steaks
1 teaspoon salt
1 teaspoon black pepper
2oz butter
1/4 teaspoon finely grated lemon rind
1tbs worcestershire sauce
1 tbs finely chopped fresh chives
2 tbs brandy
2 tbs double cream
Rub the steaks with the salt and pepper. Melt the butter in a frying pan and cook the steaks for a couple of minutes on each side. Add the lemon rind, worcs sauce and chives and cook for another minute. With the heat on low turn the steaks over, add the brandy and heat for 1 minute to warm it through. Ignite it and shake the pan a little until the flames have gone (I didn't do this bit!!! :eek:) Take the steaks out of the pan and add the cream. Once this is warmed through (do not boil) pour the sauce over the steaks and serve straight away.0 -
Shall i give you the chefs cheating way of making it?!! Just saute some onions and sliced mushrooms,season,add some pre prepared gravy,a teaspoon of french mustard,some brandy and a glug of double cream and voila............use the same method to make loads of sauces.........pepper,garlic and stilton....etc.A shadowy flight into the dangerous world of a man who does not exist.

We make this one regularly. It tastes amazing but we tend to make double quantities as it always reduces down too much.0 -
Ok, so briefly I pan fry chicken and remove from the pan. Add chopped onion and button mushrooms and fry. Then add 1/4 cup of brandy and wait until the flames have gone down.
add a tablespoon of dijon mustard and half a carton of double cream.
Does that sound about right? Or will I poison my husband lol0 -

I had chicken diane in Turkey a few years ago and loved it. So i'd love the chicken version recipe too if people are reading thisA male chef of 4. My restaurant is always full and i don't need to tout for business.
