Carrot cake cupcakes

I want to make some 'different' cupcakes and wondered if carrot cake would work OK - I don't see any reason why it shouldn't
but have only made it as a tray-bake or loaf previously.
Any favourite recipes appreciated too incl. an icing to top them (orange???)

In December we made a carrot cake in a square tin and had some mixture left over so I made them in muffin cake in a muffin tray and they turned out really good - we put on butter icing and it was lovely. Only an idea.MFIT T2 Challenge - No 46

Why wouldn't it? Cook them for less time than a big cake though.0

I use this recipe from the Bero book

but instead of orange frosting I blend cream cheese and icing sugar. I make muffins from this recipe and cook for 20-25 minutes.
The only thing is you have to refrigerate them if you don't eat them all in one go because of the cream cheese.

I haven't before John but I see no reason not to if you like orange flavour. Or you could try the orange frosting in the Bero recipe.
Also you could use mascarpone instead of cream cheese.
It all comes down to personal preference, or if you're like me...what you have in the cupboard/fridge;)Less is more0 -
What carrot cake recipe would you use for the cupcakes? Would you use muffin cases or normal cake cases?It's nice to be nutty but's more important to be nice0

Bit confused by your question nuttyrockeress. I use the Bero recipe in the previous link, and use muffin cases, though bun cases would also work...just a shorter cooking time!Less is more0

I make rachel allens carrot cake all t he time. I would use the same cake mix for buns or carrot cake slices or muffins
I don't include raisins or orange in the topping

The buns from memory take 15 ish minutes to cook - but strangely the cake tastes more superior as i made buns and cake from one batch of mix.A little nonsense now and then is relished by the wisest men :cool:
