Homemade fudge?

Does anyone have a really nice homemade fudge recipe? I normally buy some at the school xmas fair as it's so delicious but I'd like to put some in hampers this year so would prefer to save money and make my own. I followed a recipe online and it was horrible, really grainy and gross.
Thanks guys

    500g Caster Sugar
    50g Unsalted Butter
    100ml Evaporated Milk
1 tsp Vanilla Extract (not essence)

Tin lined with baking parchment 20cm x 16cm
    Method
Put sugar buttre and evaporated milk ito a heavy-based pan and bring to the boil.
Boil this mixture gently stirring occasionally to prevent it sticking.
Carry on till a thermometer reaches 115 Deg C or the mixture's holding shape in water. This should take between 5 and 10 mins

Take the pan off the heat and beat in the vanilla. and continue beating until the fudge becomes thick and creamy - almost grainy - and pour into the lined tin and allow to cool.
    Cut fudge into squares.

Uncooked fudge ....what a good idea, will definitely give it a go
This is a recipe I've used before and everyone like, although I find it too sweet, but then i don't like fudge. I halved the quantities
sift 1lb icing sugar into a large bowl
put 100g/4oz marshmallows into a pan with

    2tbsps milk,
4oz butter and a few drops vanilla essence
heat gently, stirring till mix has melted.
pour into the icing sugar, mix till smooth and add a few drops red food colouring
leave to cool, then wrap in clingfilm and put in fridge three hours

sprinkle some icing sugar on work surface and roll out to 5mm

will last a week in an airtight container in fridge

I rolled the mixture into small balls and put into petit four cases also did some with coffee flavour.
  • Im planning on making fudge for some of my hampers, so thankyou for the uncooked recipe, Il definitley give that a try!

1 - where can i get little cake cases from,

2 - how long does the fudge last

I could make some, roll like above into little balls and place into cake cases, then put into a made box and tie with ribbon.

^^You can get tiny cake cases from Tesco in the home baking section - they're less than a pound.
