    I think it might be Carriers'. The write up on The Walnut Tree says he first worked for Robert Carrier in Islington, and Wikipedia says Robert Carrier's first restaurant in Islington was called Carriers'. hth.

    Shaun Hill began his career in 1966 at Robert Carrier’s restaurant in Islington and went on to win a Michelin star as head chef of Gidleigh Park.

Handy for the keen cook as it will remind of things long consigned to the murky recesses of memory and also tempt to try combinations you hadn’t thought of - like the mellow watercress and apricot stuffing I can endorse because I cooked it last night. Good to see Franco Taruschio’s take on Lady Lanover’s 1867 poached and steamed duck making a comeback too. So, great for the aficionado. But what about the aspring but still-slightly-dodgy cook? Well, this tome will be an absolute godsend. SL

    His food was always in high demand when he was cooking at the Merchant House, the restaurant he owned for 11 years with his wife, Anja, in Ludlow, Shropshire, and before that at Gidleigh Park, Chagford, Devon, where he was head chef for nine years. Both restaurants won a Michelin star among other notable awards and plaudits, as well as a band of loyal followers.


    "I initially kept it quiet that we were opening, as I didn't want to be in the position that Claude found himself in when he moved Hibiscus to London," he says, referring to Claude Bosi, Hill's former neighbour in Ludlow, who had a horde of food critics dine at his new restaurant within days of its launch."
