Just wondered if anyone had a recipe for cornbread, have looked on the recipe index and can't find it and have googled it but all the recipes that came up were american and I didn't recognise some of the ingredients. Also, DH has mentioned fancying trying 'green chilli' which I have never heard of, any ideas???
Thanks,

    Hi Jess,

My local asda does this, you have to buy a lot, but if you know you like it I think it's great value! 5 kg for £3.50, or 7p per 100grams.

This is an American recipe so it uses cup measures. These are easy peasy to use and widely available in kitchen shops. If you don't have a set find a measuring jug which measures up to 8 fl oz -8 fl oz = 1 cup. You can also make a set using an old yogurt pot or similar -pour in 8 fl oz water and use a marker pen to mark off the water level. Cut round the mark and you have your measure. Half cups are 4 fl oz and quarter cups 2 fl oz and thirds are just over 2.5 fl oz.

Put these ingredients in a bowl and mix
    1 cup of cornmeal
    1 cup of plain flour
    4 tsp baking powder
    half tsp salt
    2 tbsp brown sugar

    Add
    2 beaten eggs
    1 cup milk
quarter cup of melted butter or oil

Mix till smooth, but don't overdo it. Pour into a greased tin about 20cm x 20 cm. Bake for 25 mins at 200c.

You can add chopped peppers, chillies or sweetcorn to the batter.

    and cheese !

No, I don't think so. DH is a bit of a foodie so would guess that he meant green chilli, he also said that it doesn't have kidney beans in it (which he doesn't like) so think it's def chilli. Thank you anyway. Haven't googled it yet so will give it a try.

You can get tomatillos here - they're expensive though ... Although there are some slightly cheaper ones here :)
