OH working normal hours for the hols and kids not eating at childminders so have to do dinner every evening :eek: everything hm unless i say otherwiise

mon, leak & bacon quiche
tues, colcannon with bacon
wed, LO colcannon & somthing from freezer
thurs, ?HM pizza prob tuna & onion
fri, see what the new veg box brings- prior planning prevents poor performance!

I have a fussy four year old, food and foodstuff she likes are:
fishfingers
chicken nuggets
mashed potato
broccoli
tuna
spaghetti rings
meat ravioli
cheese
bread
cucumber
garlic bread
white of a boiled egg
flavoured fromage frais
grapes
apples
bananas
icecream
tomato ketchup
jelly
scotch eggs
hotdog sausages
baked beans - occasionally
smiley faces/chips - occasionally
toast occasionally
and of course like most 4 year olds, numerous crisps, sweets and chocolate!
if anyone can give me any meal plan advice or how to introduce new foods then I'm all ears
ashamed to say she probably takes after me as I was a very fussy eater as a child and could have quite happily lived on spaghetti rings!
unfortunately at present we don't all sit down together to eat and I hope when we can afford a table that her eating habits will improve, though am loath to just cook one meal and see if she eats it - you know and say there's nothing else - I know she'd be like me and just say she's not hungry then and doesn't want anything and of course I don't want her to go hungry.
She used to eat shepherd's pie but has gone off that as well.

Hi all, I'm a bit new to all this meal planning since the kids left home.... oooh.... about 21 years ago!! :rotfl:
These last few years I am ashamed to admit that I have been living a bit of a high life with take-aways, meals out etc nearly every other day. I just thought I actually deserved a bit of easy living because I remember those long weeks/months/years back when my kids were small and having to try to make ten different things out of mince because we were so broke, AND make it appealing to two kids...good job they weren't fussy eaters!!
Anyway, recently I had a bit of a reality check when to my horror I found I couldn't afford something, so here I am, TOTALLY hooked on the grocery challenge and making meal plans like I HAD to years ago, but now I am actually enjoying it!
The idea is for me to stop spending so much on food and I have come up with a few recipes that I used to use years back.
So, here is my meal plan for the week..
Sat; lunch- tuna mayo sweetcorn salad
dinner- at my DIL (cheating there!)
Sun; lunch- HM tomato soup made with packet tomato passata and half a packet red or yellow lentils, water, chopped onion and celery. Usually enough for 4 people.
dinner- very cheap piece of braising beef casseroled with carrots, onions served with any veg left from last week
Mon; lunch- soup left from sunday + toast maybe
dinner- home made chilli + rice (half 1b best mince and kidney beans together with tinned chopped tomatoes, tomato puree, chillis garlic etc Have to remember to soak the beans night before and cook properly next day.)
Tues; lunch- corn fitters with baked beans. There are loads of recipes around for these. They are great and fill up the kids!
dinner- sausage meatballs (mix sausagemeat with finely chopped onion and pepper; shape into balls and place in ovenproof dish; pour over passata add water and anything else you have like fresh tomatoes, mushrooms, beans..one packet of large suasages makes 10-12 small meatballs. Bake for around 30 mins. Should feed 4 with either pasta rice or spuds..as there are only two of us, we have the leftovers next day for lunch)
Wed; lunch- left over sausage meatballs
dinner- vege and bacon bake...this is basically part-boiled spuds, cauli, broccoli, skinned tomatos sliced and layered in a large baking dish with grilled crispy bacon liberally crumbled on top, (or mixed in if you prefer)HM cheese sauce poured over it all then sprinkled with grated cheese and baked until brown. It again easily does 4 and other stuff can be added, but not mushrooms as I found that they make the whole thing look a bit black.
Thurs; lunch- leftover vege bake
dinner-large salad with chicken goujons stir fried in sweet chilli sauce (For some reason, I have FOUR bottles of assorted chilli sauces in my cupboard!)
Fri; lunch- noodles with veg (this was my staple diet in New Zealand when I was almost out of money. One packet of instant noodles mixed with a handful of cooked frozen mixed veg, a few prawns if you have them, some soy sauce and voila..lunch for one! and really cheap too)
dinner-fishermans pie. I usually make this with the cheap alomost out of date fish they have in Tescos. It's better with haddock or cod as mackerel can taste a bit overpowering. I always chuck a few prawns in too. With sweet potato mash on top, you get a very healthy filling dish. We usually serve this with salad.
Anyway, thats mine for next week..hope I haven't been too longwinded! If I have, please forgive me..as I say, I am a bit new to this!

thriftlady- its the batter aspect, have you fathomed any way of making batter without eggs? i cant think yet this morning.
OK, on a storecupbard one this week so here we go.
Sat Veg Stirfry noodles with grilled chicken fillet
Sun roast pork, stuffing, yorks, carrots, peas pots, snips gravy
Mon- Chicken Supreme with brown rice
Tues- Pizza with ham, bacon, mush, choirzo, mush peppers & s corn, jackets
Weds Bangers & mash & veg
Thurs-Chicken balti with naan & brown rice
Fri HM burgers, HM oven chips with all the trimmings.
Hopefully I can get away with spending about a tenner on veg, milk, and lunch stuff which is either HM soup, beans on toast, sandwcihes or leftovers. breakfast is cereal or crumpets etc.:beer: Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.
Theres no dollar sign on piece of mind
