Left Over Vegetables

Now here's a question for you. I had friends round for Sunday Lunch and have some left over veggies, runners, peas & courgettes & roast pots (grew them all at my allotment). I would make bubble & squeak, but as an addict to this site I wondered what the other OS's would do?

    Well last Sunday I threw them & left over gravy into a pan with what was left of meat off chicken (after it had been raided for sandwiches) - chicken casserole! added some fresh veg as well. Had enough left over to freeze for lunches later on. Last night I added them to the veg soup I had just made (using stock I had frozen from chicken last week) Just need to decide what to do with leftover beef from last night!

    There's always some new ideas popping along... which will get indexed in about... hm... two months at this rate :)

  • I would make some cheese sauce, mix it through and make a veggie lasagna (that is....... if i wasnt on this flippin diet! :cool: )

    The roast tatties should crisp up if you put them back in the oven for half an hour......or if you have a deep fat fryer run them through there for a few minutes...... the rest of the veg use in a quiche with grated cheese, I often make a vegetarian quiche using the packets of frozen mixed veg you get in Tesco, I also use it when I am boiling plain rice, just tip it in with the rice and cook as normal, drain and put in a dish then run the dish through the microwave for a couple of minutes on high when you are ready to serve it. You can also mix salad dressing with it and use it as a side dish with salad.

    I always try to bag up the left over veg, and freeze, then should i want to use some i dont have to worry about having fresh veg in the house, and i have portion sized little bags so i use them as i need them.

  • See you are all brimming over with fantastic ideas :T and I was at a complete loss what else to do. I knew you would have lots of ideas up your sleeves (or in the freezer, oven, micro, slow cooker). Wish I'd come back and read this before lunch as we have eaten the last of the cheese - on toast!
