Three weeks

Hi all,

The guys have started ripping my kitchen out and stripping plaster off the walls and they reckon on being finished in two to three weeks... yeah, right :)

It ocurred to me that I could have a celebration day and really go to town on a three or four course meal... Old Style on the day it's all finished :)

Now I know we have loads of recipes in the collection but I'm thinking celebration here...

So I'd like home made tried and tested suggestions for one or more of the following please:-

Starter

Main Course

Sweet

A nibble with a drink


There's just one tiny proviso...

My cooker got condemned this morning and is now residing in the skip. I may not have a replacement by the time my kitchen is done so you're all limited to what can be done with a kettle, a microwave, a breadmaker (no jam) and a slow cooker.

    Slow cook whole peeled pears or peaches in red/'white wine & sugar, poach gently until the sauce is reduced to a syrup & allow to cool. These can be done in advance & stored in the fridge for about 2 days, can be served warmed in the microwave or delicious cold with cream:D

    In England we have Mothering Sunday & Father Christmas, Mothers day & Santa Clause are American merchandising tricks:mad: Demonstrate pride in your heirtage by getting it right please people!

    Do you have a toaster? just curious, and I know I must be able to find something....

    What about rice crispie cakes? No? Ok then will try harder and get back to you! :D

    That's all I have that will cook things. Apart from half a box of matches and some candles :)

    I'll be able to use all my whizzers and mixers and things - just may not have a main cooker.

    OK Squeaks - here's my twopenneth...

    A summertime Old style menu relying on mainly slow cooker and microwave.

    Starter - Chilled soup
    (eg Gazpacho, Borscht, anything you fancy that can be made ahead of time, chilled and served with a swirl of cream)

    Main Course
    Stuffed chicken breasts with rice and green veggies

    Pud
    Poached pears with cream (made ahead of time) or
    Baked Maple Custards (made ahead of time)
    Variety of cakes, again made before hand.

    Any of this sound tempting. I can provide recipes if required.

    Gazpacho sounds like a good idea since I can't have too much cooking at one time... and the Baked Maple Custards sound tempting as well! :)

    Ingredients

    2 red peppers
    2 tbsp olive oil
    1 onion, finely chopped
    2 cloves garlic (crushed)
    1 1/2 lbs ripe tomatoes
    4 fl oz red wine
    3/4 pint veg or chicken stock
    1/2 tsp caster sugar
    S & P


    Method

    Put onion and garlic in bowl with oil and soften in microwave.
    Remove skin from peppers and roughly chop
    Chop tomatoes
    Add onions to slow cooker. Add peppers, tomatoes,wine, stock and sugar. Put lid on and cook on high for 3-4 hours (or until veg are very tender) Leave to cool slightly then blitz in processor or with stick blender. Strain through a fine sieve. Chill well

    To serve, ladle into bowls, season to taste and add croutons, chives, swirl of cream etc.

    Once you have your kitchen up and running, you can quarter and deseed your peppers and grill skin side up until blistered. This will give a slightly smoky flavour but is not essential.

    Ingredients

    3 eggs
    4 fl oz maple syrup
    8 fl oz warm milk
    1/4 pint single cream
    1 tsp vanilla extract
    nutmeg

    Method

    Beat eggs in a large bowl then whisk in maple syrup, followed by the warm milk, cream and vanilla. Grate in/ add the nutmeg.

    Strain the mixture into ramekins (will serve 6). Cover the ramekins with foil and place in the slow cooker. Pour boiling water in pot until it comes 3/4 way up side of the ramekins, Put lid on and cook on low for 2 1/2-3 hours. To test, insert skewer - it should come ut clean.

    Transfer custards to a wire rack. Leave for 5 mins and serve warm or cool then chill in fridge, bringing them out 30 mins before eating.
