I wanna make my own corned beef

Ages ago on the telly Rick Stein make corned beef. I didn't write the recipe down and don't know if it's in one of his books. I'd love to try and make it, so if any of you good folks could help it'd be greatly appreciated as always. Have done a search but only came up with tinned corned beef!

I tried Delia's recipe for spiced beef at Christmas and it tasted just like corned beef. if you look on the River Cottage chat forums you can find links which tell you where you can buy saltpetre. I bought some in smithfiled meat market years ago and it's still going strong
I'd love to find a recipe for pastrami but i think that involves smoking the jointIt doesn't matter if you are a glass half full or half empty sort of person. Keep it topped up! Cheers!0 -
