Hi all! I'm attempting not to go shopping again before the end of the week (though I've just realised I'll probably need bread and a few bits of fruit) which means that the only meat I have is four steaks from big pack I got cheap last week.. so hmmmm.. lots of things to do with steak then...

Saturday - lunch: soup, dinner: spinach & cheese pasta
Sunday - lunch: soup, dinner: Thai red curry steak stir fry (2 steaks) & noodles
Monday - lunch: leftover stir fry & noodles, dinner: veggie risotto
Tuesday - lunch: leftover risotto, dinner: steak & tomatoey pasta
Wednesday - lunch: leftover pasta, dinner: hot & sour soup with lots of veg
Thursday - lunch: noodles & veg, dinner: might have a go at this... http://www.bbc.co.uk/food/recipes/database/vietnamesebeefandspi_71363.shtml
Friday - lunch: treat myself to something at work, dinner: dunno - probably go shopping and get something then!

Does anyone have an egg-free recipe for these ? I'm sure my kids would love them but dd can't eat eggs.

Milk (cows but you could add cows milk instead) and egg free.
    Sweetcorn Fritters

    Ingredients

    25g (1 oz) plain flour
    1 tsp baking powder
    large pinch of salt
    About 125ml soya milk
1 large tin sweetcorn (326g undrained weight)
    vegetable oil for frying

    Instructions

    1) Put flour, baking powder and salt in a bowl.
    2) Whisk in the soya milk bit by bit until frothy.
    3) Drain sweetcorn and stir into the batter.
    4) Fry ladlefuls of mixture, flattening out with the ladle. Wait until you see bubbles rising to the surface before you carefully turn the fritters over.
    5) As you cook them, put them on a warm plate between kitchen paper and keep them warm until you eat them.
One day I might be more organised...........

This week is my first week of having a veggie box, which is delivered on a Wednesday, so my meal plans are going to run from Thursdays. I also have Thursdays off so have the chance to head down to Cardiff central market to buy meat, fish etc.

    This week:
Thursday: Ratatouille with wholegrain rice (Ratatouille: Courgettes & onions from veggie box, garlic & orange pepper had in from last week's shop, tinned chopped tomatoes, salad from veg box).
[strike]Friday: Home-style fish and potato wedges (Coley fillets from market, oven baked in breadcrumbs, potatoes from veg box, with peas from the freezer)[/strike] Ended up going to a friends house for dinner, so put the coley fillets in the freezer and will plan to use them next week.
Saturday: Stir-fry pork (diced free-range pork from market, cabbage, carrots & onion from veg box, cooked with lemon, ginger & spring onion, noodles from storecupboard)
Sunday: Roast chicken (free-range chicken from market, potatoes, carrots & cabbage from veggie box, maybe another veg from freezer)
Monday: Pasta with tomato, chicken & olives (using leftover chicken)
Tuesday: Mushroom stroganoff with wholegrain rice (mushrooms from veg box, served with green beans from freezer).
Wednesday: HM pizza (make pizza dough in breadmaker, homemade tomato sauce (will make double quanitity on monday), and using whatever is left over from the week for toppings!)

Cost so far (this is for 2 adults):
    £9.00 veggie box
£12.00 meat, fish & fruit from the market
£17.00 in the supermarket on storecupboard & baking stuff, a bit more than I'd hoped, but it included cleaning supplies, pet supplies, fairtrade coffee and some fairly posh ice cream at OH's insistence.
Total: £38 for the week, a lot of meat this week though.
  • I'm still a newbie and have never posted a meal plan so be gentle with me!

Sun: Whole chicken in slow cooker, roast pots, cauliflower, peas and gravy
Mon: Baked bean loaf, potato wedges and carrots
    Tue: Chicken (left over) risotto
Wed: Vegetable curry with cashews, rice, naans, yoghurt, mango chutney
Thu: Tagliatelle with vegetable ribbons and garlic bread
Fri: Hm battered fish and chips and broccoli
Sat: Ainsley's Jamaican Jerk Chicken, rice or couscous and veg
Sun: Slow cooked chicken again (DD's favourite), pots and veg
Mon: Going to family in France for 5 days!!

Thanks to all for so much inspiration!
