:idea: Dear Squeaky or Galtizz I recently suggested (click here) that we could perhaps have a *quick recipe* thread in the old style recipe index, eg recipes that definitely take less than 15 or 20 mins to prepare as sometimes I really don't feel like cooking for very long, often I just need to be inspired (like the quickest ever pizza thread below) and sometimes I just need to know that they work (have tried several Ready steady Cook recipes and they have never turned out right:mad: ) Lastly, I am sure that there are many MSE quick recipes out there that have come about out of sheer necessity ( I have only got this and this to use so lets try mixing them together, like the lemon curd and fromage frais idea for dessert that someone suggested) that are absolutely delicious but we wouldn't think of combining together or having as a cheapish standby in the cupboard. What do people think (sorry to give you more work

So... how about we ask people to post quick recipes into this thread, and if they have already posted a quick recipe into our Old Style Recipe Collection then they can just point to it...

Well I did type out a recipe of something I just knocked up fairly quickly but when I sent it the databases were down :doh:
Here's goes a second quickie attempt ....
Saute a couple of shallots (or onion if you prefer) 2-3 cloves garlic, finely chopped chilli and diced pepper in a little olive oil with 1tsp ground cumin. Add a couple of courgettes, thinly sliced, and saute few more mins. If you have any squishy left-over tomatoes, chop and add these and supplement with tinned tomatoes or passata. Add a tin of chickpeas (or other pulses) and handful of freshly chopped coriander. Simmer 15-20 mins and serve with pasta or crusty bread (Foccacia or Ciabatta would be good with this!) and sprinkle over some freshly grated parmesan!"An Ye Harm None, Do What Ye Will"

My favourite quickie is dhal done in microwave in 15 mins, served with pitta or naan and some lime pickle. (Pitta or naan done in toaster or grill).
Red lentils (about 4 oz should serve 2)
Sliced onion
Boiling water (or tin of chopped tomatoes and water if required) - approx 3/4 pint
Curry paste/powder - whatever you think is appropriate
Throw all into pyrex bowl (or microwave proof bowl). Stir thoroughly to dissolve curry paste. Microwave for 15 mins, stirring every 5, possibly adding little more water if too thick. Season with salt and pepper, serve with pitta or nann and any pickles/raita. If you like a smoother dhal, blitz in food processor or with hand blender.0 -
I have two quickie recipes that I use that I find pretty good
Speedy Tortillini
Boil pkt totillini in salted water. Drain and place in dish, add 250g pasta sauce & enough cream to your liking. Top with grated cheese & microwave until cheese is melted.
Speedy Quiche
1 1/2 cups milk
3 eggs
1/2 cup SR flour
1 cup grated cheese
(any veg - I use what I have but usually
grated carrot, capsicum, onion, corn, zuchinni etc)
ham or bacon
Mix all together & bake in moderate oven for 3/4 hour.Don't worry about the world coming to an end today. It's already tomorrow in Australia.0 -
This is a very quick recipe I used to make more when I had littlies about the house, who were demanding pizza for lunch. It's actually a variation of cheese on toast, but they didn't mind.
For each "pizza" you need a slice of bread, toast one side lightly.
For the topping, mix together some tomato ketchup (probably about 1 tbsp per slice, but according to taste) with some dried basil or italian herbs and some garlic salt.
Spread the topping on the untoasted side of the bread, top with grated cheese (and sliced salami if you're really feeling flush), grill until cheese is bubbling nicely.

I remember a few years back we had a cousin staying from Italy who had eaten us out of house and home. We didn't have much in the house that day as we needed to go shopping but found:
a packet of instant custard
a packet of chocolate digestives
four bananas
So we placed a chocolate digestive biscuit in bowl, covered it with slices of banana, topped with another chocolate digestive (chocolate side up so it melted into the custard), repeated the layers and then covered the lot with hot custard. My poor cousin thought it was a special "english pudding" and we didn't dissuade her. Everybody asked for seconds and still do!0 -

Sorry Squeaky..... but you could always *just* have one layer of the above banana chocolate cake instead of two :rotfl: Might be difficult as it is very moreish (SP) but we always console ourselves with the fact that we are eating lots of fruit at the same time;)0
