what shall i use 500g of rice flour for?

Hi Guys

OH bought this ages ago as an experiment and it's nearly out of date of any ideas what i can cook with it. We're veggie by the way so would have to be without meat.

    I used to buy this instead of horribly expensive babyrice when I was weaning my babies.You can also bake with it.It is particularly good in shortbread biscuits.Just replace about 2-3 tbsp of ordinary flour with rice flour and the biscuits will be amazingly short and creamy tasting.

    Thriftlady - that sounds nice - i'll have to try and find a shortbread recipe.

    How would I do that Zziggi do i just replace the flour directly or replace half or...... sorry not that confident in the kitchen yet.

    Hi all

    I bought a bag of rice flour after seeing ching on ching's kitchen (UKTV food channel!) using it to make desserts. Anyway, I completely forgot about it until now, and cant remember what she used it for.

    So - what would you make with a bag of rice flour?? Has anyone ever used it before, if so, what did you do with it?

  • I use rice flour in shortbread...

    Ingredients
    150g butter
    175g plain flour
    40g rice flour
    50g caster sugar

    (Makes about 16 biscuits)

    Rub all the butter into the dry ingredients until it becomes like breadcrumbs then knead until you have a smooth dough. Roll this out on a floured board until the dough is about ¼ inch (¾ cm) thick. Cut out circles of about 2 ½ inches (6 cm) across, !!!!! with a fork and place in preheated oven 300ºF/ 150ºC/ gas mark 2. Cook until golden brown (about 15 minutes).
    Cool them on a tray for a minute or two and then transfer to a wire rack, sprinkle with more caster sugar and allow to cool.

    I had Idlis for breakfast in India, I think they are made with rice flour, if not you can make rice flour pancakes.

    I understand rice flour is a gluten-free alternative to normal flour. I have a couple of questions that i hope someone may be able to help me with.

    Is rice flour just made from very finely milled rice? (i.e. basmatti rice milled finely?)

    Can you use rice flour in cakes, bics, buns etc in exactly the same way as you would use normal flour? Do you have to add anything?

    rice flour can be crumbly, so i wondered if you need to add anything and if so, what kind of quantities.
