Recipies for Healthy(ish) cheap desserts

Hi all,
Firstly I am hoping I have put this in the correct place.

We have realised we need to cut down our spending on food and also we want to start eating healthier. I have found some ides for main meals but we are use to having desserts and I am looking for ideas/recipes for Healthy(ish) cheap desserts.

We are trying to move to making more things at home instead of buying them in. The problem seems to be we seem to keep making the same things so get bored of them. Hence this post asking for idea so we can save some pounds off the shoping bill and get rid of a few pound off our bodies.

  • I am currently loving Total 0% fat greek yoghurt with defrosted blueberries (on offer for £1 in Tescos - long term price offer). I put the blueberries in the dish, put the yoghurt on top and then drizzle with a little bit of runny honey and sprinkle with a few toasted flaked almonds. I also like to make a low calorie trifle in individual dishes - I just put a trifle sponge in a little dish, cover with a bit of tinned fruit cocktail in juice, top with made up sugar free jelly and leave to set (you get four dishes out of a tin of fruit and one sachet of jelly). When they are set I have them with a little blob of greek yoghurt sweetened with Splenda. The kids have it with a blob of ice cream on top.

    What about a fruit cobbler, you can use any fruit, frozen or fresh about 2lb
    75g butter, chilled
    225g/8oz plain flour
    3 tsp baking powder
    a large pinch of salt
    130ml/4Vfl oz buttermilk
    a little extra sugar for dusting


    rub the fat into the flour, add the buttermilk to make a dough (you can use plain yoghurt thinned with water instead of buttermilk)

    roll out to approx 1 inch thick, cut circles.

    Put fruit in a casserole dish and put circles of dough round the edge of the dish leaving a hole/space in the middle, sprinkle dough with sugar (or sweetner) and put in an oven gas mark 6 for about 30mins. Yummy, and quite healthy unless you serve with cream!

    Strawberry Yoghurt Ice cream Veg CD DP 15mins plus freezing



    Serves 4-6 Cold Vegetarian Fruit Dessert Ices Gluten Wheat Free Eggless



    Ingredients

    275g/10oz Ripe Strawberries
    100g/4oz Sugar
    600ml/20 fl.oz Natural Yogurt

    Instructions


    1. Place the strawberries and sugar in a blender or food processor and process to a puree. Pass through a sieve if desired.



    2. Place the puree in a large mixing bowl together with the yogurt and mix well.



    3. Transfer to an ice cream maker and churn for 20 minutes or according to the manufacturers instructions. Alternatively, place the mixture in a rigid freezer proof box and freeze until just beginning to set around the edges. Beat well then return to the freezer until firm (3-5 hours).

    You can make this with any pureed fruit - wizz soft fruit in the liquidiser and use it raw, stew hard or stone fruit and then wizz it. Higher fat yogourt will give a creamier taste.

    Mascopone topped fruit

    Soft fruit packed into ramakin dishes, tinned is ideal, raspberries are lush!
    Top with dessert spoonful of mascopone cheese & spread out as best you can.
    Sprinkle with brown sugar
    Pop under hot grill until the sugar caramilises.

    Can also be made using apricot halves but don't put in ramakin dish, just lay in single layer on plate & dab cheese & sugar on each half & grill.


    Rice pudding or tapoica with fruit stirred in.

    Semolina cups : make semilina according to instructions on packet, put large dollop of jam at bottom of each cup, pour semolina on top & leave to set in fridge for 1-2 hours. When ready to serve tip out onto plate if feelign posh, eat straight from cup if not:D

    Drained, tinned peaches (~30-50p/tin ?) with creme fraiche atop or beside 'em (~60p/250g tub - the organic, half-fat stuff [Yeo Valley ?]).

    Drained, tinned apricots (~50p/tin ?) blasted in a saucepan in a bit of butter and a lot of sugar until caremalised (or just before). Serve with same as above.

    Either are gorgeousness.

    greek yogurt in a dish (you can put some fruit under if you have any) sprinkly demerera sugar lightly on top, leave in fridge for a couple of hrs, sugar melts and goes fudgy!

    Lovely recipe on here in the index for chocolate chip scones - not ultra healthy but not much sugar (1 tablespoon) or choc chips (I used chunks as they were in Home Bargains cheap) in them and my son loves them as they are without butter. Cheap and easy to make too.

    Jelly is cheap, I like jelly with a bit of fruit in topped with low fat yoghurt, yummy!

    Made a microwave sponge pudding a few times lately, but just 1/4 the amount of sponge mix on top of sliced apples mixed with sultanas and some cinnamon, it's yummy! (And more naughty if eaten with icecream, or DPs choice custard :o)
    One day I might be more organised...........:confused:
