Rhubarb Crumble?

Can anyone give me a recipe for rhubarb crumble? I love it but never made it before and a friend is giving me some of her crop :D

I'd quite like to put strawberrys in it too, for a summery twist :)

    I don't measure stuff out but it works for me.

    Wash the rhubarb, and then chop it into pieces. I do it into about 1cm but only because I like the chopping! Spread it into a suitable ovenproof dish. Presumably you can chop and add strawberries at this point.

    Then pour orange juice in to just cover the bottom of the dish by a centimetre or so.

    Maybe sprinkle (brown) sugar over it.

    In another bowl put flour and oats. I use roughly half of each (with some brown sugar, if you like).

    Then add a chunk of marg and rub it in. Add more if necessary.

    Top off your crumble (you can freeze any leftover topping).

    Pop in the oven at 180 degrees C, until it's piping hot and golden. Or in my case, starts to burn around the edges.

    Serve with yummy cream.

    I always though you cooked the rhubarb first to soften it :confused:
    I assume I can use normal sugar? Cos I have no brown at home and would rather not have to buy just for this dish :D (I only keep sugar for visitors teas, as I never have it myself!)
    I was planning on making a few smaller portions and then freeze, would I freeze after cooking? or before? :confused:

    Yes to normal sugar.

    No, I don't cook my rhubarb first. Too lazy.

    I've never frozen made crumble (only the topping) so I don't know.

    I'll try freezing it cooked (or almost cooked), I suppose as long as it's defrosted properly it wouldn't hurt.:D

    I alway add to my rhubarb a can of pie filling cherries or a just a can of de pipped cherries.
    It make the rhubarb sweet without having to add sugar.

    Give it a try lovley - eaten all the rhubarb from our garden, the next dors and my mum's:D

    Mmmm looks good!! And perfect for the hot weather :D I don't know how much rhubarb I'm getting, hope it's enough for both recipes :D

    I reckon Delia's nicked that from here. Brymor Farm ice cream is the best in the world. ;)

    As far as the crumble goes, I'll never put oats in my crumble again. They just sucked all the moisture from the fruit, leaving it very, very stodgy. Very disappointed. :(
    If you lend someone a tenner and never see them again, it was probably worth it.
