courgettes

Hello

i have one courgette plant which keeps producing. I have been away for a week and i have about 5 big ones to pick but wonder what i can make with them. Any tasty suggestions?

  • try corgette and potato soup , sliced deep fried in batter, diced in a pasta source with tomatoes, pizza topping , slice with mozzarella cheese and grill ,hope this gives you ideas

    Courgettes chopped and pan fried wth cabbage (sliced) with sweetcorn,, seasoned accordinly and served with a couple of slices of buttered bread..
    nice summer snack.. tried and tested as the Mrs made it from the stuff I have grown this season
    God helps make my veggie patch grow. He provides everything I need.. It only fails if I do NOT do as He has told me!!

    Imagine if Christianity spread like swine flu... how much better the world would be!! God Bless!

    Last week I made courgette cake and courgette soufle with my glut of courgettes and also added them into my veggie cottage pie.

    The BBC website does a good food section with a facilty where you can query an ingredient and it will list recipes including it so you could find some insipration there. Alternatively, the River Cottage website includes seaonsal recipes and they had some courgette ones too.

    Courgette and tomato chutney is good. I made Hugh Fearnley-Whittingstall's "Gluttney" recipe last year and it was lovely.

    my favourites are cocoa courgette muffins, and courgette pasta, which was last nights dinner!

    Pasta:

    Grate courgettes and slice onions.

    fry onions until soft, then add garlic then courgettes and chilli flakes.

    cook unitl courgettes are soft, add pine nuts if you like

    serve with pasta

    Update since my last posting (#7)

    So far this week we have eaten courgettes with cheese sauce and last night night we had courgettes with cous cous........

    Courgette and Basil Soup
    Chop onion and basil and fry until soft. Add a chopped potato and courgettes. Cover with stock, bring to the boil and simmer until veg are soft. Blend, and season to taste.

    I think the recipe originally came from one of the Covent Garden cookbooks. If you want exact quantities I'll try to find it for you.
