Caramel Shortbread Recipe

I've just received my free sample of Silver Spoon Light Sugar along with two lovely recipe books.
I want to make the Caramel Shortbread and have managed to get in all the ingredients except ground rice.
Recipe says 6oz plain flour and 2oz ground rice. Can someone please tell me if it is ok to use extra flour instead of the rice or can I put in something else. I'm not usually very good at baking, but it looks so nice in the book I thought I'd give it a go.

I'm sure it will be fine, ground rice just adds a nice slightly gritty flavour to shortbread but my kids don't like it much so I tend to use all flour.

Thank You Frugalfairy and Sazbo...Just going to give it a go now. Even if it's not perfect I'm sure I'll be picking away at it for the next few days.
I just love Caramel Shortbread, but usually when other people make it.

shortbread mixes use ground rice or ground semolina to make them crunchier. I prefer softer shortbread so always use all flour. personal preference really.'If you have a garden and a library, you have everything you need' Marcus Tullius Cicero0

Do you have rice flour? On the back of my packet it says it can be used where a recepie calls for ground rice.

No don't have rice flour.
Just waiting for shortbread to cool! Think it's maybe a bit soft but I'll see later once it's ready for the tasting. The whole house is smelling very sweet just now. This is def not goin to help my diet. :rotfl:

Update on Caramel Shortbread.
It has went down very well with DH..Who seemed surprised!
It is very nice but think I will try a different Chocolate topping next time.
Quite pleased with myself..Thanks for all the suggestions.
Must go now to put kettle on for T and cake.

Don't know what choc topping you used but I find that you can't beat a thin layer of melted plain choc. I used Cadburys Dairy Milk. It is nice but think I maybe should have used plain chocolate.
