Can anyone give me any suggestions for using up ready-to-eat dried apricots?
I bought two large bags of them a couple of months ago when I saw them on BOGOF,thinking that I could eat them as a snack,one of my 5 a day.
I have eaten about half of one bag and I am not that keen on them,to be honest.I was wondering if I could use them in cooking,maybe in cakes or muffins etc.

They go well in a pork based casserole with lots of spices added to it

They're nice soaked in orange juice, chopped up and added to a cous cous salad (you could also make the cous cous with orange juice - including the juice you've used for the apricots). Add anything else you like - cheese, veg, nuts, seeds...Makes a nice change from sandwiches for a healthy lunch. Got the idea from a kids' lunchbox book.0

I use them regularly in baking. I made apricot, chocolate and coconut muffins today. Just chop them up and add them to cakes, muffins, cookies and flapjacks.
I also dip them in melted dark chocolate for a dessert - works well with prunes too0 -

I eat a lot of couscous,but I had never thought of putting apricots in it,I must try that.

Use them in a lamb caserole with cumin powder and cinnamon. Serve with cous cous.
Chop them up into porridge - yummy.
Add to flapjacks or any sort of cake recipe - they add a lovely moistness.DTD - Doing Tesco Daily - while I still have vouchers!0 -
Try these seed bars (originally by Toxic Lemon). They are fab.
Chewy seed health bars
200g butter
200g golden syrup
300g porridge oats
50g pumpkin seeds
50g sunflower seeds
50g dessicated coconut
50g plain flour
150g brown sugar
150g chopped dried apricots
125g peanut butter (crunchy)
1 tsp vanilla extract
Melt butter and syrup in a saucepan. Add all remaining ingredients into a mixing bowl and pour in melted butter and syrup. Combine thoroughly. Pour onto a baking tray lined with greaseproof paper. Cook for 20-25 minutes in pre-heated 160C oven. Cut into pieces and allow to cool before removing, else they break up.0 -

, chop them up and put them on top of rice pudding. I get through loads of dried apricots.

Make your own Museli. Get a bag of Jumbo oats and add the things you like.
