    TiddlywinkI don't bake that much but in the past I have used orgran egg replacer, ground linseeds (flax), and also just oil but that's in my brownie recipe. I recommend Ms Cupcake's book...

    Also, if you are on Facebook, I'm one of the admins of "What F.A.T (Fantastic Amazing Terrific) Vegans Eat" - it's a vegan food group just for pics of food - we have nearly 100,000 members from all over the world and baked goods get posted all the time on there, and members often share recipes. It's a fantastic resource..!

    I used to be on What F.A.T Vegans eat... it's amazing some of the food that's posted there. Unfortunately I am no longer on Facebook, so don't get to see the yummies :(

    I joined and then left that group - bit too American and way, way, way too much swearing. Some of the posts are worse than Rapper's lyrics... no need for that on a public page IMO so out I went :o.

    Are you sure? Was that a while ago? I joined last year and never really noticed anything of the sort if I'm honest... maybe I just didn't notice... too busy looking at the food :rotfl:

    Yep, sure... I won't link to the posts here as I don't want to get a warning from this site. But it's not great to see a group where bad language is just the norm. For instance, here are some posts:

    'PIZZA!!! OMG ! its so hard being vegan... cuz you get sooo ####ing fat!!'

    'Sunday at work followed by 'thank #### that's over' tacos'.

    'Grilled cheese with earth balance butter & follow your heart provolone. (It's so ####ing goooooddddd)'

    'Fancy ### mushroom spinach truffle quiche and mother ####ing peanut butter jelly pie'

    ' #### me it was ####ing glorious and I'm well chuffed! Everything was homemade except the cheeky siracha chilli sauce drizzled on top!'


    It's an everyday occurrence - I must be easily offended LOL.

    Love the thread FoxFace, I'll be popping back in for inspiration!


    I am vegan and I do bake so maybe I can help with that :) I really recommend the Ms Cupcake book for cake recipes. I have had success with every recipe from that book. I find that egg replacer is not as good in a sponge, you're better with the oil or soya milk based ones. The trick is to mix all the dry ingredients thoroughly and mix the liquid ones in a jug and when you add the liquid to the dry you want to mix until just combined as over mixing can beat out the air. You then want to get it in the oven asap, once you pour the mix into the prepped tin, tap the tin on the side a couple of times before putting it in the oven.

    Recipe time! Just cooking my dinner as I post this, so I'm writing it down before I forget. Tofu satay (of sorts) but I couldn't be bothered threading skewers so it's more like a regular curry :rotfl:

    Tofu Satay (of sorts)
    Serves: 4

    Ingredients:

    2x packs of firm tofu, drained, pressed and cut into cubes (NOT Silken)
    Handful mushrooms (I used chestnut) sliced
    1 Onion, chopped
    Oil, for frying (I used coconut, but anything should do)
    Curry Powder (to taste)
    Peanut butter (I used a good 2 heaped tbls, smooth, unsweetened)
    1x Can coconut milk (can get this cheaper in "World Food" aisles)

    Method:

    Fry the onion in the oil for a few minutes, to soften
    Add Curry powder (as much as you like) and mushrooms
    Fry until softening.
    Add peanut butter and coconut milk and stir through well.
    Add tofu, stir well and simmer until cooked through

    I am currently waiting for some wholewheat noodles to cook, whilst the satay simmers... but you could serve it with rice too :)

    I have written this really quickly, so if I have missed anything or something isn't clear, please let me know :)

    Edit: Was delicious. Am stuffed. Good portions :)

    Currently cooking, so thought I'd share :)

    Mexican Bean & Sweet Potato Stew
    Serves: Lots

    Ingredients:

    1 onion, chopped
    2 cloves garlic, chopped
    paprika, cumin, oregano, half tsp each
    2 small sweet potatoes, peeled and diced
    Tin each haricot, kidney and butter beans
    2 tins chopped tomatoes
    vegetable stock cube
    Oil

    Method:

    Heat oil in big pan (I used avocado oil tonight to mix it up a bit)
    fry onion and garlic for a few minutes, then add herbs & spices
    Add remaining ingredients, mix well and simmer until potato is cooked and tender.

    I think this would make a good slow cooker recipe, which is what I intended to do but forgot this morning :o So I am just cooking it on the hob :) You could serve with rice or flatbreads if you wanted too :)
