oooh, oooh, oooh - I love bobotie and quorn mince is a good substitute for lentils. Anyone who is cooking a veggie version....can I come round for dinner please? I'm a very good guest....I help with the washing-up and bring a bottle of wine for the "feast":D

I just cook them as per the instructions on the packet and then treat them as I would mince - i.e. soften some chopped onion and garlic in olive oil, add the cooked lentils and coat in the oil/onion, add some finely chopped carrots and some stock and simmer/reduce. Maybe throw in some chopped herbs and a slug of wine (hic!) And I'm currently throwing chopped chillies into everything. 've gone chilli crazy...Yeah, whatever. I'm a grown up, I can take it...0 -
Lentil Bobotie
This is an adaptation of Sophie Grigson's recipe. She uses lamb mince and bakes for 45 mins, but I replace it with cooked lentils and bake for less time - about 25 minutes does it fine in my furnace of an oven. I'm afraid I can't remember what dry weight of lentils I cook but the cooked weight should be 500g. But hey, if you cook too many you can throw them into a shepherds pie!
15g butter or 1 tablespoon oil
1 onion chopped
1 garlic clove chopped
1 thick slice bread
150 ml milk
500g cooked lentils
1 tablespoon mild curry powder
1/2 tablespoon sugar
2 tablespoons lemon juice
25g flaked almonds
75g raisins
2 Eggs
Salt and Pepper
Preheat oven to 180 C / 350 F / Gas Mark 4
Heat butter or oil in a large frying pan, add the onion and garlic and fry until browned. Meanwhile remove the crusts from the bread slice and soak in the milk for 2 - 3 minutes. Squeeze the milk out of the bread and reserve the milk and bread seperately.
Mix the fried onion and garlic with the cooked lentils, curry powder, sugar, lemon juice, almonds, raisins and soaked bread. Season with salt and pepper and beat to mix evenly. Finally beat in one of the eggs. Spoon the mixture into a greased 2 litre (3 1/2 pint) dish and smooth down. It should be no more than 5 cm (2 inches) deep.
Beat the 2nd egg with the reserved milk, season with salt and pepper, and pour over the lentil mixture. Bake in the oven (I do this for about 25 mins) until the egg custard on top is just set and browned.
I find leftovers of this go great with baked beans!

My favourite 'cheat' to bulk out mince in chilli or shepherds pie is to throw in a tin of value baked beans. It's the only time I don't drain out half of the sauce before using them, as this adds to the meal.
I keep meaning to try lentils, but never get round to it.some people grin and bear it, others smile and do it0 -
The OH is sick to the back teeth of pasta. There must OS recipes that are cheap and dont involve pasta ...?:rolleyes:0

We only eat pasta once or twice a week at most, so yes, there are plenty of recipes without pasta. If you do a search you'll find recipes from me for pizza, lahmacun and pide. We eat a lot with rice here, curries, dals, chilli, a fair bit of potato based, gozleme, gnocchi, stews and with pastry - pies, quiches etc.Softstuff- Officially better than 0070

get a few pounds of baking potatoes, some cans of tuna (iceland do multipacks for about £2) and a jar of mayonaise. bag of frozen sweetcorn optional.
something quite comforting, about tuna mayo on a baked spud!Long time away from MSE, been dealing real life stuff..
