    If you like it hot..

    You will need:
    8 chicken thighs or drumsticks
    Juice of 5 lemons
    1 Tablespoon garlic powder
    3 Tablespoons cayenne chilli (I use Natco's)
    0.5 Tablespoon knorr chicken granules
    2 Tablespoons olive oil

    Prep time: 5 mins
    Marinade time: Min 30 mins
    Cooking time: About 30 mins

    Mix all the ingredients except the chicken together in a large bowl. Coat each chicken piece in the marinade then place in a bowl or bag and cover with the marinade.

    Chill for at least 30 mins or preferably overnight.

    Place each chicken piece on a baking tray and bake for 30 mins in a hot oven about 180 degrees or until well done and crispy on the outside.

    Devour with coleslaw, a beetroot salad or some chunky chips.

    Cheese, Tomato and Potato Dish - very cheap and extremely tasty!

    You will need:

    A bag of potatoes (Value or Smart Price or market) about 5lbs
    A tin Value or Smart Price chopped tomatoes
    2 onions
    A block of Value or Smart Price cheese about 8oz
    Oil (olive is nicest if you can get it on offer, but anything will do)
    Salt

    (Sorry, can't give exact quantities as I just do it by eye - adjust to suit your own tastes!)

    Slice the spuds really thinly (no need to peel them, and healthier if you don't)and put a layer in the bottom of a large casserole and sprinkle with salt. Follow with a layer of sliced onion, then a layer of sliced cheese, then half a tin of chopped tomatoes. Repeat the layers until all your ingredients are used up. Drizzle (now there's a real Jamie Oliver word!) some oil over the top and sprinkle with grated cheese. Cover and cook in the oven (if it's on anyway for something else) or the microwave until it's cooked through - the spuds should be really soft with no hard bits left. If you want a crunchy top take the lid off towards the end or bung it under the grill for a bit.

    We have sausages or something with it if we happen to have them, but it's not really necessary as it's tasty enough to be eaten on its own.

    When my children were babies I didn't want to get them used to overpriced chemical baby foods and they were weaned on a less rich, salt-free version of this blended with milk. They loved it then and still love it now they are grown up.

  • Low Fat Fruit Cake

    1lb (400g) Dried Mixed Fruit
    1 Mug soft Brown Sugar
    2 Mugs Self Raising Flour
    1 Beaten Egg
    1 Mug Hot Black Tea

    Soak Dried fruit overnight in 1 Mug Hot Black Tea.
    Mix all ingredients together, and then place into loaf tin or round cake tin. I normally place some Greaseproof paper on the top for the 1st Hour to stop the Burning of the top of cake.
    Bake for 2 Hours at 160c, 325f, Gas Mark 3.

    To make a birthday type fruitcake, substitute some cherries for the dried fruit.

    Kaz Tip: Place in Airtight Container overnight .. dunno why just tastes nicer the next day …
  • This is a foolproof sauce, kids will love it! My daughter opts for the shovel approach when eating it, but at 18months I'll forgive her for not adhering to normal diningroom etiquette.

    Tomato sauce

    two tins(400-450g?) of decent Italian toms

    one large onion (roughly chopped)

    one large carrot (roughly chopped)

    one large celery stick (roughly chopped)

    one large clove garlic (chopped/squashed)

    few fresh basil leaves ( I throw in about 5 or more large ones)

    five tbsp of olive oil

    salt & pepper to taste

    put all ingredients into a medium saucepan and simmer for 30 mins (no lid)
    then take off the heat and pureefy? with a hand blender. Then back on to simmer for 15 mins, I would put a lid partially on here to reduce splashes of sauce as it spits & gurgles.
    then straight onto a bed of steaming pasta (penne is good)
    and lots of parmesan if you like it (my daughter again forgets herself and grabs handfuls , prep school for her!)

    and voila !!

    I've just made this and it's really lovely so I thought I would share it with you.

    Ingredients
    Butter or cooking oil,
    Potatos,
    Red onions chopped,
    Frying Steak cut into strips,
    Beef Oxo Cubes dissolved in about half pint boiling water,
    Plain Flour,
    Paprika,
    Worcestershire Sauce.

    Method
    Cook the potatos. Heat the butter or cooking oil in a deep frying pan and add the frying steak, flour and paprika. Cook for about 4 minutes stirring continously. Add the onions and cook for a further 3 minutes. Add the potatos and the Oxo cubes dissolved in about half a pint of boiling water. Add Worcestershire sauce and simmer for about 10 minutes and serve.

  • Here's a way of feeding your family luxuriously for three days for hardly any money without appearing to dish up leftovers, thus laying yourself open to mutiny.
    Ingredients for Day 1: Cassoulet. Serves 4, with lots to spare.
    1 whole pack dried haricot beans, soaked overnight in cold water to cover.
    2 onions
    2/3 cloves garlic
    2 tins tomatoes
    1-2 packs pork sausages (use any you like including frozen. The slow cooking transforms even cheapest ones)
    1 rasher bacon per person OR leftover diced pork from a joint OR leftover lamb OR 1 tin ham, chopped pork-and-ham, etc.
    1 chicken thigh per person, optional.
    1-2 heaped tablespoonfuls black treacle OR golden syrup OR brown sugar
    1 heaped dessertspoonful any mustard OR Worcestershire sauce
    Salt, pepper, 1 tsp. mild dried herbs, not sage.
    2 tablespoons Olive oil/butter/dripping
    The end of a bottle of wine or cider, optional, or stock, or more water

    Method: Drain soaked beans, cover with cold water (NO SALT), bring up to boil; boil until tender. Could be 1-2 hours depending on how elderly your beans are. Do not worry if you haven't soaked them. Simply boil for longer, replenishing water where necessary.
    In a large casserole, fry onions/garlic in oil until browned, put on one side, then add chicken joints if using and brown all over, together with bacon/ham/pork.
    Replace onions, and add beans and their cooking water, plus tomatoes, chopped. Bring up to a simmer then add treacle/sugar, mustard, herbs, salt and pepper, and wine if using. Try and lift sausages and chicken joints to top of casserole. Slow oven for at least 2-3 hours, covered. Top up with wine/water if looking dry. Season again before serving with fresh crusty bread.
    There will be loads left, so divide leftover beans into two portions, putting any remaining sausages/chicken/bacon into one half, and refrigerate.

    Day 2: Chili con Carne. To meaty half of remaining beans, add 1-2 dried or fresh chillies and 2 chopped fresh tomatoes. Chop any sausages or chicken left in the casserole. Reheat until bubbling hot, and serve with grated cheese, more chopped fresh tomatoes, and plain boiled rice.

    Day 3: Baked Beans on Toast. Heat rest of beans just as they are, adding 1 teaspoonful of tomato puree (optional), and serve on thick fresh toast.

    That's half a week of main meals for the price of one. Hope this helps.

    Serves 4

    Ingredients

    3 Chicken breats cubed
    1 large onion
    5 garlic gloves ( more or less depending on how much garlic you like)
    5 rashers smoked back bacon choped up into small pieces
    Few sprigs of fresh rosemary or a dessert spoon dried if you haven't got any.
    1 bag of new potatoes ( amount you would normally use to feed 4)
    1 large glass white wine
    Splash olive oil
    Butter
    Salt
    Pepper

    Method
    1. Boil the bag of potatoes till cooked then leave in cold water to stop them cooking.
    2. Chop up the onion, garlic, bacon, chicken and rosemary.
    3. Put a little oil in a pan i use a wok.
    4. Fry the onions and garlic till the onion softens.
    5. Add the chicken and fry of till its nearly cooked you may need to add some more oil.
    6. Add the bacon and rosemary, cook till the bacon is cooked. Season with salt and pepper.
    7. Drain the potatoes and add them and the large glass of white wine to the pan.
    8. Cover and cook for a further 10 mins add a lump of butter if you like the sauce to thicken.

    Try to keep everything moving in the pan all the time apart from the last 10 mins.

    Serve with fresh bread, french stick or ciabatta.

    Good filling meal for 4 which can be done for less than £5

    Maybe this has been done before but I couldn't find it. I made this afternoon on a friend's recommendation, I couldn't believe it worked but it did!! And it was yummy (thereis none left :o )

    Ingredients
    4oz self raising flour
    4oz margarine
    4 oz caster sugar
    2 large eggs
    2 tbsps coca powder
    1 tsp baking powder
    bit of boiling water to make it a paste

    Method
    1. Cream cugar and sugar roughly in a bowl (doesnt have to be particularly smooth or creamy).
    2. Sieve in the flour and coca powder and break in the eggs.
    (I suppose at this point you should add the baking powder but I forgot it and it seemed to work).
    3. Mix it all really well and then add a bit of boiling water to make a paste (I used a tablespoon or two).
    4. Scrape it into a baking paper lined dish - i used a 10' by 8' lasagne type dish
    5. Cook on High for 6 minutes (my microwave is 850W).

    It was really good, kids and hubs all loved it too (praise indeed) and took about 10 minutes from start to finish :T

    Ingredients

    Olive oil
    150g Chorizo diced
    1 lg onion, sliced thinly
    2 celery stalks, diced
    2 garlic cloves crushed
    2 tsp chopped fresh thyme (or a little dried)
    1 tsp paprika (or maybe 2, depends on how you like it)
    2 tomatoes, diced
    1 ltr chicken stock
    2 x 400g tins cannellini beans (or kidney beans/chickpeas that sort of thing)
    salt
    pepper

    Heat the olive oil in a pan and cook the chorizo for 3-4 minutes until crisp. Drain on kitchen paper

    Reduce the heat on the pan.
    Add the onion and celery to the pan and cook until soft.
    Add garlic, thyme, and paprika and cook, stirring, for a couple of mins.
    Add tomatoes and cook for another min.
    Return chorizo to pan.
    Add stock and simmer for 10 mins
    Add beans and cook for 5 mins
    Season with salt and pepper:D

    This is a 1970s Family Circle recipe and good for throwing together at the last moment when you've just discovered the letter screwed up in your child's pocket asking for cakes for tomorrow!!!
    3tsp instant coffee
    1tbsp boiling water
    1oz marg
    1oz caster sugar
    4 level tbsp golden syrup
    3oz cornflakes
    3oz sultanas
    Add water to coffee to dissolve in a pan. Add sugar, syrup and marg and melt over a low heat. Then add cornflakes and sultanas. Stir together. Cook over heat for 1 min then transfer to 16 bun cases. Leave to cool and set.
