  • hi,

    this week it is.......

Gonna attempt a HM tomato sauce for the meatballs - got to make it this weekend and freeze so all hubby has to do it re-heat. Any good sauce recepies using a couple of ingredients so I don't need to buy lots?? (i have loads of tomatoes and dried herbs, need to buy tomato puree anyway)

Got some real bargains in our local Co-op the other day e.g. 700gms Aberdeen Angus cubed beef for £1.68 - should've been £6.98 , along with some nice sausages, pies, pizzas etc - spent about £8 in total (& I work for a Co-op subsidiary so get 10% discount too :T), came out with loads & it all went straight in the freezer - so most of my meals are planned around those this week:

Saturday – Chicken Fajitas with salad & sour cream. HM Chocolate Meringue

Sunday – Beef Curry Dopiaza with rice, Naan bread & sour cream. HM Chocolate Meringue

Monday – HM Spaghetti Bolognaise with garlic bread

Tuesday – Fish in Butter sauce, mashed spuds & broccoli

Wednesday – Chicken & Mushroom Pie, chippy chips & mushy peas

Thursday – Saucy Sausage Pasta with Garlic Bread

Friday – HM Mushroom soup & Pizza

Hope everyone has a good week - thanks as always for the inspiration folks - you all keep me on track.

Ok, here's mine for the week :)

Sat: Jacket Potatoes with a choice of fillings - beans, meaty beans, cheese or butter
Sun: Sausage & Mash with Onion Gravy
Mon: Leftover Chilli with Pasta - yum
    Tues: At Mum's
    Weds: Spanish Omelette
    Thurs: Beef Stroganoff
Fri: Shepherd's Pie (Using leftover bolognese sauce from freezer)

Breakfasts will be cereals. Lunches are usually sandwiches with cooked meat, excepting weekends when they're usually bacon-filled ;) For snacks there will be fruit and the occasional chocolate biscuit. I'm not feeling much up to baking lately, so hopefully that'll all change soon.

Have a good week, and thanks for posting your mealplans. They're great :)

For once, I'm at a loss.....! DH says he doesn't know when he will be back yet, could be Wednesday, could be Thursday; And I spoke to a friend yesterday who says he wants to come over next week but not sure which day yet...... so it's impossible to plan anything.
This evening I am entertaining our neighbours, doing a roast, and unless the other neighbours join in as well, I will probably be eating leftovers for several days.
I may be back with a meal plan in a few days.....:-)

This was a success after all. Everyone thoroughly enjoyed it

    This is what I did:

Cooked 200g green lentils (boiled for 10 minutes, then simmered for a further 15, adding a finely chopped onion for that last part.) Drained this and mashed it up with 75g oats, 2 tbsp ketchup, 2 tbsp brown sauce, a good pinch of salt, white pepper and 2 tsp dried sage. I shaped it in a 1lb loaf tin a little bit shorter than the length of the tin so it was a nice thickness for slicing. It was baked for 40 minutes at 190C. The cranberry sauce and some mustard went really well with it, and it would be lovely in a sandwich with the sauce and mustard too.

Fingers x-ed the flan goes as well, although I used all of the butternut up yesterday so the meal plan should now read sweet potato flan with baked beans and coleslaw ;)
Love and compassion to all x
  • We've just got back from a wonderful weekend away in Liverpool, so have had some simple pasta, olove oil, fresh herbs and parmesan shavings :D This week's plan:

    Monday – spaghetti bolognaise

    Tuesday – quesadillas and salad

Wednesday – DH back from China so we’ll celebrate with Spiced beef casserole, with HG peppers and squash

Thursday – Bonfire night sausage and bean casserole, HM treacle toffee, HM parkin

Friday – aubergine, tomato and mozzarella pasta bake

Saturday – pizza and Strictly; ice cream

Sunday – leg of Berkshire pork, roast vegetables, peas, carrots and sweetcorn; apple and almond crumble

There's a sponge cake and some date and fig flapjack ;)

    Penny. x
