Like the new index, great idea to put it into sections.
Started making the pickled cabbage last night but didn't think it had had enough time in the salt by the time I wanted to go to bed so stuck it in the fridge and will do the pickling bit tonight, be interesting to see what it's like after 24 hours...
Was having a little look round re portion sizes earlier - I don't have any scales at home and was wondering what 40g of cereal looked like, as that's apparently how much a portion should be - came across this http://www.wcrf-uk.org/fruity_friday/downloads/health%20professionals/4_Healthy_portions.pdf which is quite handy but everything looks like tiny amounts.. is it just me? Could explain why I have a little podgy stomach:rotfl:

25 elderflower heads (flowers open no brown bits)

Method
i shook all the flowers to remove bugs,then removed as much of the stalk as possible from the flowers and discarded them
I then washed them(the recipe didnt call for this but i want to be sure i had got all the bugs!)
Whilst doing this put water and sugar into a pan and heat until all the sugar is dissolved(keep stirring)
Using a peeler remove all the zest from the lemons then slice the lemons thinly
when the syrup is boiling pour it over the lemon slices,zest and flowers in a large bowl (i used a small bucket used for homebrew) then stir in the citric acid
Cover with a cloth and leave for 24 hours, then strain into platic screw top bottles i used the 500ml fizzy drinks ones its says it keeps indefinitely but i have frozen it
to serve add fizzy water and ice,very tasty a bit like old fashioned lemonade with a hint of something herbally ,very refreshing on a hot day too ,very nice added to fizzy wine too (hic hic....)
The final yield was 2.5 litres and i think a dilution of 1:5 is about right
so over to you weezl for geeky maths:T
Diluted at a 1:5 ratio, and served as 250ml servings (3/4 of a large ikea tumbler;):D:o) I make it 3.5p a glass:money::T. And another idea I had, is that I've got some plastic ice lolly moulds, which each take 50ml of liquid plus space for expansion. Elderflower ice lollies would come in at less than a penny each! Worth considering for the summer eh?

Just a thought as I peruse these pages of magic - creep creep!
- and I remembered a tip fro the Tightwad Gazettewhen cooking sour/acidic fruit. Add a pinch of bicarb, it cuts the acid and the fruit needs less sugar.
I've tried it and it works.0 -
Congratulations on this thread Weezel and for all those others who have pitched in with such good ideas. I think that this thread will, in time, become another of the Old Style classics.
Nowt much to add except I notice talk of the dried onions on an earlier posting- I noticed in a Canadian recipe [whilst I was over there:D ] that they suggest blitzing them up with bread crumbs and adding an egg to make a coating for burgers.
