Fridge/Freezer Water feed

I currently live in a new build and we have decided we would like to replace our current integrated fridge freezer with a standalone American one.

Most of those we like (and that won’t protrude past the built in units) have a integrated water feed.

However our unit is on the opposite side to the water/sink.

Is there any (safe) way we can route a feed around to the location?

Is it ok to place the water underneath the kitchen cupboards and run it around the kitchen?

Yes. That's what the void behind/underneath [most] kitchen cupboards is for.
Just don't forget it's there and shove a broom too hard underneath it. Probably your best bet is to run it along the floor against the back wall as far as you can.
