last minute family holiday end of may

I wonder if it is worth waiting up to the last minute for some deals on a all inclusive package family holiday to Cyprus , Greece ,Portugal, Spain etc at the end of May ( childrens school holidays ) .
We are open to most locations but like a good quality Hotel ( 3-4 star)
Has anybody got any experience of any bargains in previous years ?
