How do I record live HD stream from Youtube with VLC?

I never have the time to watch the live streams on YouTube, but I'm baffled as to how to record them. Can VLC do this or do I need to pay for something?
I don't want to record the laptop screen, just grab the video as it comes in via Ethernet or Wi-fi, so I can do other things whilst it's recording.
I'm sure this is so simple, but I'm a little stumped at the moment.

Open VLC.
Open Help.
Scroll down to Video Streaming.
Click it.I think this job really needs
a much bigger hammer.
