we are blocking off the old airing cupboard door and removing the airing cupboard to make our spare room bigger, is it worth insulating the new bit of false wall with anything? (I'm guessing if anything, it would be soundproofing)

You don't have to but anything you use will help. Any kind of insulation will help with sound proofing as well as heat, but if noise is a particular issue you can get specialist sound insulation.
Even the 2mm thick laminate flooring foam insulation must help if you have any laying around, you could do 2 or 3 layers, if not loft insulation is cheaper than polystyrene Kingspan type stuff - which is surprisingly expensive IMO.0 -
