Gardening Leave? No, you finished a month ago! What can I do?

Once you are redundant, the role is redundant and doesn't exist, they can't keep someone on gardening leave as that would prevent them from gaining employment. If work did pick up during that period, they would have to re-hire you, not simply call you back and pretend nothing happened.
Did you have a one month notice period in your contract? If so they need to pay your notice period but should not require you to work it (this might be where gardening leave is coming from?).0
