Apply for a new one now, I applied for a new one a couple of weeks ago and got one a few days later.

Yes it will be valid, you don't need to show a passport to use a EHIC.

I will shortly be moving house. Do I need to apply for a new EHIC card under my new address or can I still use my old card which is still well in date?

I don't know what sort of EHIC card you have but mine doesn't have any address on it of any kind.

So if that is the case then the answer is that you can carry on with the existing one.
