Pumpkin soup, pumpkin (good for halloween) onion, carrott, a potato and stock.
I make it by roasting the pumpkin, and using leftover potato and veg from another meal so my how to do probably isn't the best but I'm sure someone will come along with instructions.0 -
Ah that's one I can do! Loooooooooooooooove it and the pumpkins seem to last ages!

I made one the other day with some random veg that was lurking in the bottom of fridge
Carrots, pots, parsnip (peeled& chopped)
1 veg stock cube with boiling water (pint)
level teaspoon dried mxed herbs
sliced leek
handful of pearl barley & hanful red lentils ( dried) lurking in cupboard
In pan, simmered for about 40 mins. It was lovely:beer: Well aint funny how its the little things in life that mean the most? Not where you live, the car you drive or the price tag on your clothes.
Theres no dollar sign on piece of mind

My Gran's carrot soup:
4 large carrots
1 large potato
1 small onion
1 chicken or vegetable stock cube
1 bay leaf
(this evening I shall be adding 'some' red lentils, but I don't know how it'll turn out!)
peel and chop everything
chuck it all in a pan with the stock cube and the bay leaf and a pint of boiling water
simmer for 30 minutes
remove the bay leaf
blend
eat (it'll prolly make enough for two or three!)Comping, freebieing and trying to pay the mortgage off early!0 -
Another I made
LeeK & Potato
200g potaotes peeled & chopped
2 leeks
pint of stock -made with cube
1/2 pint skiimed milk
onion chopped
drop of oil
fry off onion, leeks and potato for about 5 mins. Add stock simmer for 15 mins, blend, then add milk if you fancy it thinner or dont if you like it thick

I've just had a yummy carrot & coriander one today. I made it by
- frying a crushed clove of garlic with some ground coriander for a few mins
- adding a load of chopped carrots, lid on for 10mins to soften, then add enough veg/chicken stock to more than cover the carrots and leave for about half an hour or longer.
- whizz with a hand blender. Add a handful of chopped coriander and quickly whizz again. S&P to taste.
I used a big bag of value carrots from asda - the only reason I can see they're cheap is because the sizes are different.0 -
If you ever have a leftover chicken
put all the skin and bones in a pan -fill with water
put this on the hob for appro 2hours
drain this "stock" into another pan fill with peeled and chopped
parsnips/leeks/carrots/onions/turnip and crushed garlic (tesco sometimes have soup packs on for 99p wih most of these veg in.
boil this for 1-2 hours then add chicken and if you are feeling flush bacon pieces!
boil for another 30mins
add salt and pepper to according to your own taste.

Just lob all the old veg in your fridge in some stock and blend when cooked. I do that every Sunday for my lunches for the week. YumLydia
