Vegetarian meal plans

Despite not being strictly veggie any more, the vast majority of our meals are veggie.
What about the veddies/demi-veggies amongst us sharing the meal plans in order to swap ideas? I have only done one meal plan and that kinda went to 'pot' as I have been out three nights this week.
Sunday - spal bol with quorn mince (to use up mushrooms and peppers)
Monday - macaroni cheese
Tuesday - was out so let hubby and kids fend for themselves. Shopping day.
Wednesday - Slow cook chilli and rice
Thursday - HM pizza (using shop bought bases, naughty I know but there were in the cupboard for AGES - mine was veggie but added smoked sausage to hubbys/kids) and salad
Friday - Was planning HM oven chips and salad but had to work late and ended up with a sandwich - hubby had fed kids
Today - planning felafel in pitta with salad, plain yoghurt and HM chilli sauce
Sunday - veggie lasagne, roast potatoes and carrots and any leftover salad
Monday and Tuesday are yet to be decided, but will be pre-shop so will be using whatever we have in the house!
So, what did you plan this week or have this week - I need some inspiration to make my meal plans interesting

Hi, some of the meals in our Old Style Recipe Collection in the Main Course section just happen not to have some meat in them, or the meat could be swapped for quorn or soya. Then there's a Vegetarian section too. Again, some of the Slow Cooker recipes might give you some inspiration. Just follow our "Indexed Collections" sticky at the top of the board.

We're a vegan household here and tend to rotate the following sorts of meals, with variations on ingredients, according to what's in the fridge! Virtually all is homemade quite cheaply.
nut-based loaf ( made in slow cooker)
nut or pulse-based rissoles/burgers
oven roasted root vegetables
Slow cooker concoction...based on tins of stuff, soya mince, veges etc!..just bung it in before i go to work, and kids eat it when they get in from school!
Pastry-filled meal i.e some sort of pie filled with soya/veges/pulses
pasta -y type meal - baked in oven when there's time as sooooo much nicer!
Soup
Rissotto
Cous-cous with some cooked veggies over the top
Stir-fries
Jacket spuds plus filling
Pitta bread + fillings
Salads

Jolaaled - I'm intruiged by the nut roast in the slow cooker - any chance of a recipe (or if no recipe, a rough guide will suffice

It's really easy. you put the made-up nut roast mix ( see below) into a pudding bowl that is small enought to fit inside the slow cooker. Cover the pudding bowl with foil ( with a crease in the middle for possible expansion) and then carefully pour water in the gap between the pudding bowl and the cooker crock..just so it's about 2 cms deep. Then i slow cook on low for about 8 hrs. Comes out really well..much better than when i've tried it in the oven!
The mix can be varied, but usually includes:
chopped nuts, Breadcrumbs, tomato puree, minced onion + garlic ( sauteed..maybe with a few spices), herbs. The mix needs to be quite sticky, so if it's on the dry side, i add some tomato juice, or Bisto gravy. If you're not vegan, you could add an egg.
Sometimes i include some stuffing mix, or soya mince. Just depends what's available!

I had a glut of zucchine (courgettes) from the organic boxes. As the zucchine are quite large I decided to stuff them.
That's how:
Cut zucchine lengthways and escavated a deep groove into them (saved the pulp as a minestrone soup veg for next day), lined them up in an oiled baking dish then:
minced chunks of dry bread (I save all the bits of crust and leftovers in a box for this sort of thing) in the food processor, fried a couple of onions in olive oil, chucked the breadcrumbs in the onion fry up and tipped the lot in a bowl. Added salt, pepper, pinch of nutmeg, 1 egg, some grated cheese (leftover parmesan but you can add any cheese) and mixed to a sticky paste, which I stuffed into the zucchini grooves.
All in the oven until zucchine cooked and stuffing crusty
Groovy!

Another thing I had a lot because it is in season is ASPARAGUS omelette. Good way of using asparagus without wasting a lot of it. Chop asparagus in little rounds, all the way into the chunky stem - stop where it becomes woody, appx 1 inch from end usually - and fry with a chopped onion in a bit of oil. Take off from fire once soft and cool for a while then add to beaten eggs and do omelette. YUMMY!

My last three weeks as a veggie meal planner:
Mon - Maccaroni Cheese
Tues - Oven-baked Jacket with cheese & mushroom omlette and salad
Wed - tomatoey lentils (made up recipe using green lentils)
Thur - Cumin chickpeas (made up recipe using dried, soaked chick peas)
Fri - Quorn sausage casserole
Sat - Quorn chunk curry, rice, naan and poppadums (big cheat meal, as bought the sauce, naan and poppadums)
Sun - Roast - made by wonderful boyfriend. Quorn fillets as the "meat"
Mon- Rissotto (made with brown rice, onions, mushrooms, pepper, garlic, brazil and cashew nuts, pumpkin seeds, sunflower seeds, poppy seeds, paprika, stock, black pepper and creme fraiche)
Tues - Quorn sausages, HM colcannon, gravy and peas
Wed - Pasta with mushroom, peppers and onions, slived up quorn fillets and leftover curry sauce from the jar!
Thurs - Chilli and rice (HM with TVP mince)
Fri - Lentil shepherd's pie
Sat - Quiche (bought), potatoes, sweetcorn and peas
Sun - Macaroni cheese (oven baked, one of our faves!)
Mon - TVP spag bol (from the freezer, made a previous week)
Tues - Oven-baked Jacket with cheese & mushroom omlette and salad
Wed - lentil Dahl and brown rice
Thur - Pasta meal made with whatever veg is lying around!
Fri - Cheeseburgers (wholewheat baps, quorn burgers, fried mushrooms and onions. Good for when we're going to see a film, and in a hurry)
Sat - Mushroom stroganof
Sun - HM Pizza0
