    theres some cracking recipes in her BS- I cant wait to get stuck in, particularly to the ice cream and the mousses, brilliant :)

    I'm not vegetarian, but I do love my vegetables.

    Recipe

    1 or 2 pitta breads per person
    (depend whether you serve them with anything. My Oh just like them on there own so he has 2 I like mine with Coleslaw so I have 1)
    HM tomoto sauce
    toppings - sliced onions, peppers, sweetcorn, sliced olives etc etc
    grated cheddar or sliced mozzarella.

    1. pre-heat grill
    2. grill pitta bread on both sides
    3. top grilled pitta bread with tomato sauce - right up to the edges
    4. cover with a thin layer of cheese
    5. Top with your selection of topping
    6. pop back under gril for 5 to 8 mins until they are golden brown and bubbling.

    Serves 4 - 6

    1 diced red pepper
    1 diced onion
    1 diced stick celery (optional, but gives great flavour)
    1 crushed glove of garlic
    2 tsp olive oil

    Gently saute the above ingredients together for about 5 mins
    Then add the following ingredients. Bring to the boil, then simmer for 15 minutes.
    1 can chopped tomatoes
    13/4 pint of stock
    2 tbsp long grain rice
    1 tin red kidney beans
    sprinkle of fresh or dried herbs such as thyme, parsley or oregano
    couple squirts worcestershire sauce
    1 tsp sugar


    I tend to serve my soup with chunky HM bread and cheddar. For a little extra bite to the soup you could a little chilli powder when sauteing the veg.

    Black Saturn has posted these meals as SUGGESTIONS to what you can do. It may suit her and her family, but not everyone.

    I can't believe that some members are moaning (wheres this? wheres that?) - the good thing with suggestions is that they are completely changeable to suit your own needs. So try just that!


    While you're at it, try appreciating someone elses efforts.

    Zombiecazz, the red soup sounds gorgeous but isn't strictly veggie unless you replace the worcester sauce. I think I'll make it without the sauce. Many thanks, Chell

    P.S I'd love to know what the peanut butter recipe is too.

    Makes about 12


    2 finely chopped onions
    3 grated carrots
    1 chopped pepper (whatever colour)
    1 chopped stick celery

    Saute the above ingredients for 5 mins

    Add the next 2 ingredients and saute for a further 5 minutes
    1 large grated courgette
    3 or 4 mushrooms chopped


    mix the sauted vegetable with the rest of the ingredient in a bowl.
    2lbs or so mashed potato
    some chopped mixed herbs
    4oz grated cheddar
    3oz or 1/2 cup crunchy peanut butter
    seasoning

    Leave the mixture to cool. Then mix in 1 egg
    Once cold shape the mixture into 12 or so thick fingers
    Coat each finger in egg and then bread crumbs (can add some grated parmesan to breadcrumbs for extra flavour).

    These can then be deep fried, shallow fried, grilled (i tend to shape them like burgers if grilling) or frozen.
    Serve this with salad and HM coleslaw or HM salsa.

    I always have breadcrumbs, as whenever I have some leftover slightly dry or hard bread I bung it in my kenwood to make breadcrumbs and put it in the freezer.
