    Anne Marie - whereabouts are you. Hendersons relish is made in Sheffield (and the locals go mad for it!). I live about 20 miles away (in Doncaster) and is found in our local supermarkets here.

    That's great news for me! My husband and kids are travelling to Doncaster this weekend to visit family so I shall ask him to buy me a bottle. (I am going to have a fun weekend with other doula colleagues! hehehe)

    Looks like I cannot get my hands on the Henderson Relish up here, unless some of speciality shops stock it. :'(
    Tried ordering on https://www.madeinsheffield.com, but for some reason couldn't get site to work for me.
    Will drop Hendersons an email asking if anyone stocks in this neck of the woods, failing that will print out form from their site and order it.
    I am a woman on a mission here! ;D

    But my husband's aunt from Doncaster is making curtains for us (as a Xmas gift) and either dropping them here on her way to the South coast to see family, or sending them, so I shall ask her to buy it for me.

    Sorry so late, not had time to check on all the forum lately! :-[
    Haven't managed to get my hands on it at all, and can't find it in my area, though there are still a few specialist shops to check out. I did find and buy Yorkshire Relish at Dobbie's Garden Centre of all places! Ingreds on bottle are water, sugar, spirit vinegar, syrup, salt, tamarind, garlic, cayenne pepper, cloves, sweetener, saccharin. Is this anything like ingreds in Hendersons Relish?
    Anyway, have found this pretty good, and cost £1.99 for 284mls. Am comparing it in dishes compared to my mushroom ketchup at the moment. Proof of the pudding will be with a tomato juice, which does need a good kick and celery salt in my book - also a bit of lemon if I have it - I just need to remember to get some tomato juice.

    CARROT AND APRICOT PATE


    3 oz dried apricots
    3oz mashed tofu
    1oz ground almonds
    8oz grated carrots
    3 fl oz water or orange juice
    1 tsp lemon juice
    1tsp cardamon
    1tsp grated nutmeg


    Cut apricots with scissors and simmer in liquid for 10 mins till plump.
    Combine with all the other ingredients in a bowl and mix well.
    Transfer to oven proof dish, cover with lid or foil and bake at Gas mk 6 for 45 mins.

    DATE LOAF

    8oz chopped dates
    6 fl oz cold tea
    8 oz plain wholemeal flour
    4 tsps baking powder
    1 tsp mixed spice
    6 oz brown sugar
    1 beaten egg
    1 tbs demerera sugar


    Soak dates in tea for 2 hrs.
    Add all ingredients except dem sugar and mix well.
    Pour into a foil line 2lb loaf tin. Sprinkle dem sugar on top.
    Bake at Gas mk 4 for 1 to 1hr 15 mins.

    Lovely spread with butter, fruit conserve or as a pudding with custard, ice cream, fromage frais etc

    Hi,

    I make a veggie bolognese sauce using puy lentils; boil them up for about 15-20 minutes, and substitute for minced beef; I fry up onions and peppers with chopped mushrooms and garlic and then add tin(s) of tomatoes & herbs or tomato pasta sauce. The kids love it, and you might even have enough left over to freeze for another day. You can use it to make veggie lasagne too.

    Have just had to use up some courgettes in a hurry and thought that the recipe I used might be useful to someone

    Courgette and Tomato bake

    Slice up a couple of courgettes and soften in a frying pan with olive oil and crushed garlic (to taste).
    Place a layer of the courgette slices into a gratin dish or shallow casserole. Top with tinned tomatoes thickened with tomato puree and seasoned with herbs etc., or your favorite tomato pizza sauce. Cover generously with breadcrumbs (can be frozen at this point). Sprinkle on some grated vegan cheese and bake until heated through and breadcrumbs crispy.

    However, now I have a name for the sauce, will have a look this end of the woods, although can't recall seeing it.
