If I let out my principal residence while I move abroad for work, will I have to change my mortgage to a buy-to-let?

Depends who you are with at the moment but probably not. You will need to seek the lender's consent to the letting and they are likely to impose a charge for consenting.
If you don't seek their consent the tenancy agreement might not be enforcable so make sure you cover everything off before going abroad.
