    That sounds a great variation Lucie. very tasty. You can't beat the old style puddings.

    You can do chocolate sponge with fruit underneath . That's good too.

    If it's for a big gathering as original post suggests would go down well with all. Men especially seem to like old style puddings Eve's pudding, spotted !!!!!!, bread and butter pudding, jam roly poly etc.

    Sponge gingerbread is nice with custard or cream on.......mmmmmmmmm!

    I know that you already decided on B&B pudding but I thought I'd add another pud for next year :D

    Pineapple upside down pudding (normal quantity to fill a loaf tin)

    Grease and flour tin
    Cover bottom with Golden Syrup (no not your bottom... the bottom of the tin :D)
    Arrange pineapple rings/chunks on the syrup and a few cherries (cocktail ones are good)

    4oz marge
    4oz castor sugar
    2 eggs
    5oz SR Flour

    Cream the butter and sugar, add beaten egg a little at a time, fold in flour and add either pineapple juice (from tin) or milk until the mixture's a dropping consistency.

    Pour cake mix onto syrup and fruit and bake for about 40 mins on 180 deg (or until a metal skewer comes out clean)

    Serve with custard :)

    My Dad doesn't eat puddings but he makes an allowance for this!
