using up roast lamb/beef

Give me a chicken and I can roast it, then make stock, casserole, sandwiches for the week etc.
But beef or lamb or Pork even and I never get past sandwiches :confused:
Any suggestions for meals to use up the meat?

    My nan always used to make a lovely shepherd's pie on Sunday afternoons when we'd finished our roast dinner (with beef or lamb) then she'd have it for tea on Monday. She minced the meat ( in her Spong mincer that suctioned onto the worktop) along with an onion and sometimes a carrot, made some gravy to mix in and moisten it and put it in a shallow pyrex dish. Cover with mashed potato and then bake in the oven when required until piping hot and brown on top...scrummy!!

    Layer sliced potatoes, onions and the sliced meat in a pyrex dish, finish with potatoes, pour the leftover gravy (thinned down with stock). Cook in a moderate oven until the spuds are cooked and browned on the top

    If its a small amount of meat left I make pasties. Mix it with cooked onion, carrots and a little gravy. Make pastry.

  • I think that it probably is, at least you can walk away and leave it to cook and it's easier to take to the table as well, it looks a bit like a hot pot

    We always had rissoles on Mondays.Mum minced the left over meat with a bit of bread and onion,mixed in an egg and seasoning,and fried them both sides.Easier these days if you have a food processor.You can make them flat and crispy or chunkier if you want.We always loved them with mash and baked beans!

    I remember those large mincers that attached to the work surface. My Nan had one......she used it to make breadcrumbs.

    One thing you may have missed is to simpley warm the meat up the following day for a second 'roast dinner'.

    Mix leftover lamb with some mint jelly and a dash of tabasco, season and wrap up in a filo pastry like a spring roll YUMMY! (an Ainsley Harriet recipe)
