hi all :hello:
have searched high and low for this - i'm looking for a (easyish) recipe for a sundried tomato loaf. they used to do a yummy round one in morrisons, they may still do it but i've moved and not got a local morrisons now. it was quite a strong tomato flavour and the bread was quite reddy/orangey in colour. any know of a similar recipe? or for rolls?
thanks!

This is the one I use for a medium loaf in the breadmaker:
I use the 'medium white with additions' cycle on my machine
1 tsp FA yeast
450g strong plain flour
300ml water
60g parmesan, finely grated
2 tsp sugar
1 tsp salt
1 tbs oil from the SD tomato jar
and when the cycle gets to the 'add bits' stage:
55g SD tomatoes, dried on kitchen paper and chopped0 -
Hi,
The one I use is
8oz flour (I prefer white for this one)
1tsp dried yeast or one sachet (7g)
4/5 dessert spoons olive oil
Sun dried tomatoes in jar from Aldi use about 8
Water (sorry don't have amount as I do it by hand prob around 300ml)
If you prefer your crust a bit crispy then add about 1 dessert spoon of semolina.
Mix dry ingredients together add oil and mix in; add water to create a very slightly sticky dough; I then add the chopped sun dried tomatoes, the dough gets a quite a bit stickier but should still be easily manipulated.
Loosely shape and leave to rise until it is at least double the size; re work and shape and then bake in medium oven (Gas 5) for around 40 mins until dark golden brown. It is really nice warm but best left for about a half hour out of oven as it is then easier to tear/cut.
This is more like a ciabatta than a loaf, but I have had compliments on it!
Let me know what you think!
p.s sorry about the mix of measurements I tend to work by eye!!:oLightbulb moment - August, 2006
