anyone with a recipe for bread that works on quick cook setting of bread machine?

Hi,
I have decided to start making bread everyday as with a family of 6 we get through a fair bit. I can make a good loaf on the normal setting, but not on the quick cook which takes less than an hour, it doesnt seem to rise and stays rather heavy. Does anyone have a foolproof recipe?I have searched the forum but im not coming up with anything.I found one for a brown loaf but that was made by hand.
Any help would be great.

Simple question - are you using the recipe that your BM came with for a rapid loaf
The rapid programmes don't give the yeast time to develop properly, so you tend to need more.
I have a Panasonic, and the Rapid Programme is identical to the regular one, only the yeast is increased by 50%

A tip for the Panny quick programme. Use luke warm water instead of cold. It means that it gets a better rise on the bread when it is proving.0

I also found out by accident that spelt flour gives a better result when done half and half on a rapid programme. Not very MS though![SIZE=-1]"Knowledge is knowing that a tomato is a fruit. Wisdom is not putting it in a fruit salad"[/SIZE]

I have tried to do a white loaf twice on the quick bake on my Panny. Both were a disaster, brick like, very dense and heavy. I never tried again. It will be interesting to see if anyone can come up with a foolproof recipe, as it's not very money saving to lob all those ingredients straight in the bin!Grocery Challenge £139/240 until 31/01

that's odd because I've done some 50/50 wholemeals on rapid bake and get very good results (3hrs). I still maintain the quality of the flour makes a big difference and I always use 20ml less water on all bread recipes.0 -
rapid bake setting is usually less than an hour. I can get a perfect loaf out that takes 3 hours. Im after a quick cook one.It's the start of the no takeaway challenge.0

Sadly I dont eat any of the bread as I am weight watching. My ds gets to eat it all and he only likes white, though I do recall a lovely 50/50 and 70/30 wholemeal on the 5 hours programme though.Grocery Challenge £139/240 until 31/01

I have found that adding half a crushed vitamin c tablet to bread maker makes yeast work better and bread rise more. This is especially useful if making wholemeal or quick recipes. I can't remember where I first read about it but it does seem to work.0
