Crackers and Pork

Right i found a box of stale crackers in the cupboard last night and as I'm an OS'er in training I decided to bash them up to make some sort of coating for the Whoopsied Organic pork escalopes i ppicked up for 50p in Asda last night....I wsa thinking it would make a kind of pork schnitzel type thing? but I'm not really sure how it'll work...I want to make this tonight...anyone have any idea's how to do it though?

I bet that would work. I'd bash the pork out, then flour and egg it, and then coat it in the breadcruumbs. Maybe add some mixed herbs or dried sage for extra flavour? Then I'd fry them off. I can't see how it wouldn't work, the crackers are near enough the same as breadcrumbs

Thanks Gingernutmeg, I hoped it would work but I just wanted some reassurance that I wasn't going to ruin our dinner!
and i've got some fresh sage growing in my herb pot so that'd be perfect, is sage the best herb to go with it do you think or would there be others that work well with pork?0 -
I like sage with pork, a little bit of fresh sage is only going to give a mild flavour anyway so it won't do any harm. Fresh thyme would be nice too, or if you wanted to go spicy you could add some paprika to the crumbs to get a kind of Hungarian goulash-y schnitzel.
