Turkey Apple burgers

hi all,
I need some cooking advice. I made some Apple Turkey Burgers and they were so wet ... and just seemed to be missing something! The recipe I used mixed up asked for the ingrediants (grated apple, onion, herbs etc) to be mixed up, there was no binding agent so at first I mixed these up and then tried to put them into a frying pan to cook and it became clear they were sticking together ... so I added an egg and that seemed to help a little... but still they seemed to be missing something and they were too moist ....
Has anyone any ideas?

Breadcrumbs might help a bit, or if you can get hold of something like panko (Japanese 'dry' breadcrumbs) that might help.0

Breadcrumbs is the traditional "drying" ingredient.
I usually recommend simply squeezing HM burgers really, really hard (imagine it's an enemy!) into a ball to make them firm before reshaping them. Chilling them in the fridge also evidently helps.
PS. "Taste gap filler" ideas for turkey burgers - swap the above breadcrumbs for some dry stuffing? A bit of cranberry sauce?The acquisition of wealth is no longer the driving force in my life.

Burger press? NOOO! If you want uniform burgers, buy them! HM ones have more "rustic charm" and there's less washing up.

excellent ... I will have another go with the breadcrumbs.
I dont fancy a burger press either really as I am aiming to be OS Moneysaving and that would sort of cancel it out.

Did you grate the apple and squeeze all the liquid out first??
I made turkey burgers the other day - I used 2 packs of turkey mince - I'm guessing around 600gms in total, one egg, a handfull of grated cheese, breadcrumbs (I used soda bread as I can't have yeast) and a spoon of mustard......kept adding more breadcrumbs until the mix was the right consistancy and then made the burger shapes, wrapped them in tin foil and put them in the fridge for a few hours.
I always oven bake then in the foil for the first 20 mins - makes them lovely and juicy and then finish them off uncovered.
This made 14 burgers so loads for the freezer.

omg the cranberry version sounds lovely!!
I did grate the apple and sqeeze or at least attempt too ... lol. I just put them straight in the frying pan though.
I think I need to do your version though.

Hi there
Next time you grate the apple/onion..drop it onto the middle of a tea towel and gather it up so all the mix is in a ball ..and twist it over the sink.... you will be amazed how much liquid comes out
