10 minute Butter Bean Recipe
Sweat finely sliced garlic til soft.
Add cooked butter beans to garlic and stir until thoroughly warmed.
Add a little oil/ butter/ stock or if you have none of those, water.
Mash with a large spoon.
Serve instead of mashed spuds.
Particularly good with grated cheese and steamed greens, meat or veggie sausages and, for omnivores, grilled or roasted lamb.0 -
