Making my own candied / crystallised fruit

Does anyone have a recipe for crystallising / candying fruit? I particularly want to try making crystallised pineapple, pear, fig. My grandad used to make it when I was little but unfortunately he is no longer with us and so I can't ask him for the recipe. I seem to remember that it took weeks, if not months to make but was always worth it.

    I made some candied peel last year and then used it in homemade mincemeat - which promptly fermented. This was the only time that has ever happened and I suspect the homemade candied peel. So now I only use it in cakes which are going to be cooked
    It doesn't matter if you are a glass half full or half empty sort of person. Keep it topped up! Cheers!
