Making my own candied / crystallised fruit

Does anyone have a recipe for crystallising / candying fruit? I particularly want to try making crystallised pineapple, pear, fig. My grandad used to make it when I was little but unfortunately he is no longer with us and so I can't ask him for the recipe. I seem to remember that it took weeks, if not months to make but was always worth it.
Thanks
Thanks

Hi PP,
Could you let me know how to make candied peel for cakes - it's VERY expensive to buy here and it's one of the things I buy when I'm back in the UK. Thanks0 -

Try here
It's a sticky process, but well worth it.

I made some candied peel last year and then used it in homemade mincemeat - which promptly fermented. This was the only time that has ever happened and I suspect the homemade candied peel. So now I only use it in cakes which are going to be cookedIt doesn't matter if you are a glass half full or half empty sort of person. Keep it topped up! Cheers!0
