Mortgage Application Checks

Hi there
I received an agreement in principle a couple of months ago and now wish to proceed with an application. The only problem is that since I received the agreement in principle I have changed jobs. I have heard that many lenders are wary of you if you haven't been in a job for long, so was just wondering whether I could get away with not telling the mortgage company? As I have just started my new job i would still have the last 3 months payslips from my previous post......do the mortgage companies actually contact your employer? If so, is it just to check you work for them or can they ask about contracts etc?
Many thanks.
