Fairy cakes...how long will they last?

Options
Instead of mini chocolate bars I want to make fairy cakes for the children to take to school. Usually I make a batch of 24 in the evening and they've disappeared by the next morning so I don't know how long they'll keep for. Because I don't want to be making 24 every night we're all going to have to be good!

So if I make a big batch Sunday evening, will they keep till Friday or will they be hard by then? Or is there anything I can add to them which I might have in my cupboard to keep them fresh for the week?

    Freeze them in batches... they are fine . They will dry out in a couple of days and go hard.. but freezing them is fine...

    I used to make a square sponge cake , ice it and then cut into fingers...makes a change for fairy cakes but just as easy..

    Ah great thanks! Didn't think of freezing them. Do you think if I put them from frozen into lunch boxes in the morning they'd be alright to eat by lunchtime at 12?

    I have been making them for my kids lunch boxes for the last month i have 3 kids and just freeze them in batches of 3 in cling film, from frozen they go straight in the lunch bag and are defrosted my the time they eat them ( i know this for a fact as i am also one of there dinner ladies :) . Works great. i also do this with chocolate brownies i make from them and weetabix brownies, my eldest says her mate is always jealous of her nice snacks

    For total kudos at school try these

    My daughter took one to school and kept being asked how come your ice cream has not melted lol. Its buttercream added in the morning so its fresh as i tend to use alittle milk to make it smoother and lighter. Just use a sponge receipe for cone cakes.

    This might be a stupid question but do you bake the buns in the wafers, or do you cut them to size later on??

    I love the look of these cakes.:T I'm always looking for something different to treat the kids now we're on a tight budget.

    Oh they look great.
    I make cakes with apple sauce and they keep moist for 5 days or so
