mmmmmm rice pudding skin  - we all used to fight over the skin in our house when we were kids. Mum had to use a very wide shallow container to make ours - so that there was enough skin to go round us kids as well Dad!

My Rice pudding is perfect for OH and I , I do 4oz pudding rice 2oz sugar and 2 and a bit pints of milk.. cook at 190 for 20 min stir and then at 160 for another 2hrs no more stirring... its usually thick and sticky round the sides and creamy but thick in the middle.. OH has the outside and I have the creamy bit in the middle .. the skin goes in the recycle bin YUK YUK YUK.... but its wonderfully delicious and there is always enough for seconds....:rotfl:

    Freeze it.
If you lend someone a tenner and never see them again, it was probably worth it.
