corn meal

i bought a big bag of cornmeal from Sainsbury's Asian foods section. (not very nice quality, now I know why it was cheap, the stone-ground stuff from the whole food shop is much better). Maize meal pancakes are nice (at least with the good stuff), if fatty. But do you good folks have any other recipes? cornmeal muffins, maybe? (the recipes i have found so far are massively complicated).

    It is a bit complicated but there's a recipe from More with Less called Pilgrim's Bread that uses cornmeal. It's nice bread though - if you Google for the recipe there a lots of versions online ... here's one :) .

    I make fish fingers with mine....cut your fish of choice into chunks/strips, dip in milk then into some cornmeal with a sprinkling of paprika and pop in the oven on lined baking tray for around 10 mins, great with sweet pot wedges and creme fraiche!!

    I tried a nice one from Saving Dinner this week.

    You grease a pie plate. Make the polenta in a saucepan in the normal way with cornmeal and water, and simmer for 5 mins until thick. Add one beaten egg. Spread over the pie plate and bake for 15 mins at 200. Then sprinkle over a can of drained pinto beans, some grated cheese and some crushed tortilla chips and bake for another 15-20 mins until set. Serve with salad.

    It was surprisingly tasty, and we both (non-veggies) enjoyed it a lot.

    or make some cornbread yummy....i haev an ainsley reciepe that involves chilli topped with cornbread it is totally delish...pm me if you want the recipe
    Other women want a boob job. Honey the only silicone i'm interested in is on a 12 cup muffin tray, preferably shaped like little hearts :heart:

    Hi, i have a receipe for Duckanoo - its a caribbean dessert using cornmeal and dessicated coconut. it is from a caribbean website so adapt accordingly. If you can't get banana leaves (who can!!! lol) use silver foil instead fold in into a pouch and pop the mixture in seal completely and put into boiling water. This really is lovely I tried it for the first time last week.

    1 pound cornmeal
    2 ounces flour
    1/2 pound sugar or brown sugar
    1/2 cup grated coconut
    1 teaspoon cinnamon
    1 teaspoon allspice
    1 teaspoon molasses
    1 teaspoon vanilla extract
    2 1/2 cups milk or coconut milk

    Mix all dry ingredients and the grated coconut. In a separate bowl, mix together all wet ingredients. Add wet ingredients to dry ingredients and stir until all sugar has dissolved.

    Lay out pieces of banana leaf (cleaned). Drop 1/2 cup of mixture into center of each leaf; fold and tie with a string (or a piece of banana bark for real authentic touch).

    Drop each parcel into a large pot of boiling water and simmer for 40 minutes. Serve warm.
