Cake recipe?

Hi everyone

I'm sorry, i'm not sure if this is in the right area, but today is my husbands birthday and i thought it would be nice to bake a cake with the children for him for when he gets home from work.

Its been a while since i made a cake from scratch (i think school was the last time actually:o)

I have no weighing scales so the simpler the recipe, the better ie a cup of sugar or tablespoon of flour

    Try this thread - my two favourite cakes.

    Alternatively doa title search for "cake" and you'll get threads on chocolate, coffee, carrot, etc.

    Or there's always google ;)

    Why not try this one, it’s by Bernadine Lawrence,(book “How to feed your family for £5.00 a day “) she sometimes post’s on the Jamie Oliver thread as chelsea.housewife. You will need a cup that will take ½ pint of liquid.

    Wholefruit cake


    6oz or 170g or 1 cup of Demerara Sugar
    3oz or 85gm Margarine (use an 8oz block and divide it up)
    1lb or 450g Dried fruit = (1 bag of tesco value)
    1 teaspoon mixed spice
    1 level teaspoon bicarb of soda
    1 pint or 2 cups water
    2 eggs
    1lb or 450gm or 4 cups SR flour

    Put all ingredients except eggs and flour into a saucepan, add the water and bring to the boil. Turn off the heat, stir and cover. Leave to cool for 1 hour.
    When cool beat in the eggs and gradually stir in the flour
    Turn into a 10” tin and bake at 170*c or 325f or gas mark 3 for 11/2 – 2hours or until a knife inserted into the middle comes out clean
