pot roast chicken-cooking times?

Hi,
I am making a pot roast chicken this evening-chicken weighs about 1.8kg, I have it in a casserole with some leeks, onions carrots and new potatoes. with some wine and water in the bottom (about 3cm depth)
My question is-if I cook it at abot 160 (fan oven) how long will it take-I was guessing about 2 &1/2 hours? I normally roast them at 200 but I thought that might burn the pot roast. Or do I just do it at 200 for the same length of time I would if I was normal roasting it (about 1 hr 40?)
Also-it wil be my OH putting it in oven-I may be late-will it be ok if its left a little longer? or best to just reduce heat once time is up to keep it warm?
