Thanks for the suggestions.......it's finding the '5 minutes' that's the problem :-) I'm going to try YogaGirl's suggestion of preparing individual bags of salad at the weekend, and I think I might well make a big list of lunchbox ideas too. I might even have a go at making a big batch of soup and then freezing it in individual portions!0

oat cakes are great on the GI diet (apparently) and are easy to throw into your lunchbox in the morning/evening.
When cooking your normal evening meal - roast some veg at the same time. Keeps in the fridge well for a few days. portion up and take one with you every morning. Very tasty cold as lunch. I use onion, garlic, aubergine, corgette, red pepper and anythign else dying in the fridge.r.mac, you are so wise and wonderful, that post was lovely and so insightful!0 -
Give up the idea of packing yourself a lunch every day. On Monday, take 2 packets of crispbread, 3 pots of cottage cheese or 1 giant pot*, and a big bag of apples in to work and eke these out over the week. Slimming and saves you having to think every day.
*Assumes you have access to a fridge. If you don't, small tins of tuna and a tin opener, cheese spread keeps 2 or 3 days, sandwich spread ditto.

EastChristina got me thinking. I've got a spare drawer in my desk at work which I can use as a stockcupboard filled with tins of tuna, canellini beans, oat cakes, pine nuts etc. All I have to do on a Monday is take in some fresh stuff (salad, hummus, crunchy carrots etc) and I've got all the ingredients for a healthy lunch whenever I can't be bothered/haven't got the time to assemble a lunch at home. I can vary it a bit by bringing in HM soups that I've made at the weekend and frozen, or by bringing in a few leftovers from last night's supper. I think I've got this sussed :-) Thanks everyone!0

Luckily my canteen is subsidised so I only have to pay 44p for a meat sandwich.
I normally keep a multipack of chocolate bars/biscuits in my locker or car boot.
That way if I can't be bothered to make a pack lunch, I grab an apple on the way out and I only have to pay for the sandwich. I drink water as well.
I have a problem with the breakfasts though, as I work shifts and often start at 6am, and have a breakfast break at 9am.
I can never think of anything breakfast like to bring that would survive. I don't like the idea of more sanwiches or fruit. I normally have cereal or a fry up. Any ideas?0 -
Anything oaty for breakfast is good so why not make some healthy oat bars (I'm sure there are few recipes in the index) and these will give you a slow release of energy and stop you getting the mid-morning munchies
Or take in some dried muesli in a bag, along with a carton of milk or yoghurt to have! Hardly any prep to do for that"An Ye Harm None, Do What Ye Will"

Keep a pack of individually wrapped cheese slices (okay I know they are processed :rolleyes: ) in your home fridge, and the crispbreads, crackers or crispbakes in the office. Grab a couple of cheese slices each morning and a piece of fruit, and you won't starve, even if it's not very exciting.
I used to keep a Pot Noodle in my desk drawer too, along with a couple of cup-a-soup sachets.
